Bake quick Christmas cookies – 3 simple recipes

Christmas scents like cinnamon, anise or gingerbread make us happy and we encounter them almost everywhere during Advent. Create a Christmas atmosphere in your home by baking quick Christmas cookies yourself. Today we'll show you a few simple recipes that will impress guests, friends and family.

Ingredients

1 cup softened unsalted butter
1 cup and 2 tablespoons granulated sugar
1 No
1 teaspoon vanilla extract
3 cups all-purpose flour
a pinch of salt
1 egg white, beaten
340 grams of salted cashew nuts
a pinch of cinnamon
400 grams of dulce de leche caramel cream (available in REWE)

1. In a food processor, cream together the butter and sugar.
2. Add egg and vanilla extract. Continue stirring at low speed.
3. In a medium bowl, combine flour and salt. Add to butter and egg mixture. Mix at low speed until a dough forms.

4. If your dough doesn't come together and is crumbly, you can add ice cold water 1 tablespoon at a time until the dough becomes nice and smooth.
5. Line the baking tray with baking paper. Roll out the dough between two layers of baking paper.

6. Without removing the top baking paper, let it cool in the fridge for 1 hour.
7. Preheat oven to 180 degrees.
8. Remove the top sheet of baking paper and roll out the dough a little thinner. It shouldn't be sticky.
9. The dough should be 0.5 – 1 centimeter thick. Cut out Christmas cookies.

10. Lightly brush squares with beaten egg whites.
11. Distribute the salted cashews over the cookies.

12. Sprinkle each square with a pinch of cinnamon.
13. Bake for 12 to 15 minutes or until golden around the edges and fragrant. Allow to cool completely.

14. Heat dulce de leche in the microwave until soft. Allow to cool slightly and pour into a piping bag.
15. Make zigzag lines of dulce de leche across each cookie.
16. Let stand for about 20 minutes.

3. In a medium bowl, combine cocoa powder and salt. Add to butter and egg mixture. Stir again at low speed.

As with the first recipe, roll out the dough between two layers of baking paper, let it cool for an hour and cut it out.

10. Brush with egg white and distribute orange peel evenly over all cookies.
11. Bake for 12 to 15 minutes. Then let it cool down well.

Russian balls with chocolate chips

A new version of an old favorite recipe! Add chocolate chips to traditional Russian balls!

Ingredients:

1 cup unsalted butter, softened
1/2 cup powdered sugar
1 teaspoon vanilla
2 1/4 cups flour
1/2 teaspoon salt
1 cup mini chocolate chips
Additional powdered sugar for sprinkling

Preparation:

1. Preheat oven to 190 degrees. Line two baking trays with baking paper.

2. Beat butter, 1/2 cup powdered sugar, and vanilla with an electric mixer until fluffy. Add flour and salt and stir until the dough forms. Add the chocolate chips. When the dough is soft, let it cool in the refrigerator.

3. Using a tablespoon, make balls of the dough and place on the prepared baking sheet.

4. Bake for 7-10 minutes until the bottom is just lightly browned. Remove from the oven and let cool for just a minute until you can handle them. Fill a small bowl with powdered sugar and roll each ball in the sugar. Cool completely on a rack.
