Chocolate Sandwich Cookies: 3 delicious cookie recipes to melt into!

Baking cookies is definitely one of our favorite things to do during the Christmas season and sweetens the wait until the holidays. Sure - classics like marzipan cookies and vanilla crescents are always a good choice, but a little variety every now and then wouldn't be bad, right? Crispy cookies with a creamy filling – our chocolate sandwich cookies are a dream!

We’re sure you’d agree – calories just don’t count at Christmas! There is hardly anyone who can resist the smell and wonderful taste of freshly baked cookies. This year we decided to try at least 2 new types of cookies and these chocolate sandwich cookies are definitely our absolute favorite! Sometimes with chocolate filling, peanut butter or vanilla like homemade Oreo cookies - read on and enjoy it!

Recipe for chocolate sandwich cookies

After weNuss-Nougat Kipferlbaked, we would now like something really chocolatey! These chocolate sandwich cookies are a real treat after the first bite and we find it difficult not to eat them all at once.

Ingredients for about 25 pieces

Cookie dough:

  • 450 grams of wheat flour
  • 45 grams of baking cocoa
  • 130 grams of granulated sugar
  • 150 grams butter, at room temperature
  • 2 Owner
  • 20 ml milk
  • 1 pack of vanilla sugar
  • A pinch of salt

Chocolate filling:

  • 200 grams of dark chocolate
  • 150 ml Sahne

  • Preheat the oven to 180 degrees and line two large baking trays with baking paper.
  • For the dough, place the sugar, butter and vanilla sugar in a large bowl and beat with a hand mixer for 4-5 minutes until you get a white mixture.
  • Add milk and eggs and mix everything well for 1-2 minutes.
  • Mix wheat flour, cocoa and salt in a separate bowl and gradually add to the wet ingredients.
  • First mix everything with the hand mixer and then knead it with your hands to form a smooth dough.
  • Roll out the dough on a floured work surface to a thickness of approximately 4 mm and cut out 50 circles using a circle cutter. Depending on your wishes, you can of course cut out the cookies in any shape you like.
  • Place the cookies on the baking sheets and prick them with a fork.
  • Bake for about 10 minutes and let cool completely.
  • In the meantime, for the filling, bring the cream to the boil and add the chopped chocolate.
  • Let stand for 2-3 minutes and then stir until smooth.
  • Let the ganache cool slightly and spread it on half of the cookies.
  • Cover with the remaining cookies and voilà – your delicious chocolate sandwich cookies for Christmas are ready!

Make your own Oreo cookies

And here is the perfect recipe for all Oreo fans! These crunchy chocolate sandwich cookies with vanilla cream taste better than the original and making your own Oreos is much easier than you think.

Ingredients for about 15 pieces

Cookie dough:

  • 150 grams of wheat flour
  • 50 grams of cocoa
  • 90 grams of sugar
  • 130 grams butter, at room temperature
  • 1 pack of vanilla sugar
  • A pinch of salt

Vanillecreme:

  • 80 Gramm Butter
  • 30 grams of cream cheese, soft
  • 100 grams of powdered sugar

  • For the dough, put butter, sugar and vanilla sugar in a bowl and mix with a hand mixer for 2-3 minutes until smooth.
  • Add the wheat flour, cocoa and salt and knead into a smooth dough using the dough hook of the mixer.
  • Wrap the dough in cling film and place in the fridge for 30-40 minutes.
  • Preheat the oven to 180 degrees and line a baking tray with baking paper.
  • Roll out the dough on a floured work surface to about 0.5 cm thick and cut out 30 circles with a cookie cutter.
  • Bake for about 10 minutes and let cool completely.
  • In the meantime, for the cream, mix the butter and sugar with a hand mixer for 3-4 minutes until smooth.
  • Add cream cheese and mix briefly.
  • Pour the mixture into a piping bag with a round perforated nozzle and spread over half of the cookies.
  • Place another biscuit half on top and press lightly.
  • And that’s it – it’s so easy to make your own Oreos!

Chocolate sandwich cookies with peanut butter

Crispy brownie cookies and an airy, light peanut butter filling – these chocolate sandwich cookies are a feast for the sensesthe perfect Christmas cookie!

Ingredients for 16 pieces

Cookie dough:

  • 100 grams of wheat flour
  • 25 grams of cocoa powder
  • 110 grams butter, at room temperature
  • 200 grams of sugar
  • 1 No
  • 1 TL Vanilleextrakt
  • 1/2 tsp baking powder
  • A pinch of salt

Peanut butter filling:

  • 90 grams of peanut butter
  • 60 grams butter, at room temperature
  • 120 grams of powdered sugar
  • 20-30 ml milk

  • Preheat the oven to 180 degrees and line a large baking tray with baking paper.
  • To make the dough, place the butter and sugar in a large bowl and beat with a hand mixer for 3-4 minutes until you get a light white mixture.
  • Add the egg and vanilla extract and stir briefly.
  • Mix wheat flour, cocoa, baking powder and salt in a separate bowl and gradually add to the wet ingredients.
  • Place about 1 tablespoon of the dough on each baking tray and bake for 8-10 minutes.
  • Allow the cookies to cool completely.
  • In the meantime, for the filling, mix all the ingredients in a bowl until smooth and pour into a piping bag.
  • Divide the filling between half of the cookies and cover with the remaining cookies.
  • Enjoy!
