Swabian sausage salad traditionally prepared: This makes it delicious and authentic!

Is a normal salad too vegetarian for you and would you like something heartier and meatier? Then a sausage salad is just the thing! And Swabian style makes it even more versatile, as it traditionally consists of two types of sausage. How a Swabian sausage salad is prepared?

If you really want it traditional, you should stick to a few basic ingredients. Because a real Swabian reacts sensitively if the salad is different (or at least you shouldn't call it “Swabian”).

Which sausage for Swabian-style sausage salad?

Two types of sausage definitely go into this salad: meat sausage and black sausage (blood sausage). The pickles should also not be missing.

How many grams of sausage for sausage salad per person?

Since the filling salad is usually served as a side dish to a main course (or as the main course itself), you can expect a total of around 150 g of sausage per serving. However, this is not a rule, so you are welcome to adjust the quantities to suit your own taste.

This is how you prepare the treat

In addition to the preparation time, also plan a steeping time of around 3 hours.

  • 350 g each of meat and blood sausage
  • 5 gherkins
  • 2 onions
  • 60 ml apple cider vinegar
  • 30 ml cucumber water
  • 1 EL Senf
  • 70 ml
  • 1 tbsp sugar (possibly more to taste)
  • Pfeffer
  • Salt

A Swabian sausage salad for 4 people can be made in just 15 minutes!

  • Skin the sausages (if necessary) and cut them into strips.
  • Peel the onions.
  • Cut the onions into thin rings and the cucumbers into slices. If the gherkins are larger, you can also cut them in half lengthways to create smaller semicircles.
  • Place vinegar, cucumber water and mustard in a bowl to prepare the marinade for the Swabian sausage salad. Mix the three ingredients with a whisk.
  • Gradually add the oil while stirring.
  • Season with pepper and salt.
  • Add the sugar and taste. If it doesn't have the right sweetness for your taste, you can add more sugar.
  • Place the salad dressing and chopped ingredients in a salad bowl and mix well.
  • A Swabian sausage salad then rests for a few hours. Put it in the fridge for two hours and then outside again at room temperature for one hour.

Swabian sausage salad with black sausage: freeze or not?

If there is a large amount left over after eating, you can initially store the salad in the refrigerator for two or three more days. To do this, seal it airtight in a suitable container.

Are you not sure whether you will eat the meat salad within this time frame and are you considering freezing it? Theoretically this is possible, but it probably won't taste very good once it's thawed. For this reason, it is not recommended.

What goes with the salad?

The finished salad may be extremely tasty, but what if you still want to serve something extra with it? What goes well with Swabian-style sausage salad?

If possible, serve with fresh farmer's bread. Alternatively, a baguette is also suitable. Other suitable side dishes are fried potatoes, or “Brägele”, as they are also called locally, and Bibiliskäs, which is nothing more than “herb quark”.
