  • 1 carrot, peeled and chopped
  • 1 large onion, diced
  • 2 cloves of garlic, minced
  • 100 g Flour
  • 340 ml milk
  • 100 ml Sahne
  • 450 ml beer
  • 1 EL Dijonsenf
  • 280 g Cheddar, grated

Add the carrot, onion and garlic to the pot and sauté for 10 minutes. Add the flour, stirring constantly, and continue frying until the flour turns golden brown, about 3 minutes. Mix the milk with the cream and slowly pour the mixture into the pot, stirring constantly. Turn the stove a little hotter and add the beer and mustard to the pot.

Bring the soup to a boil and continue cooking over low heat until the soup thickens (about 10 minutes). Then take the pot off the stove and stir in the cheese. Only add a handful at a time, stir until the cheese has melted and only then add the next handful. Finally, season with salt and pepper.

Bavarian potato salad

  • 1 kg jacket potatoes, cooked with the skin on and diced or sliced
  • 20 small gherkins, cut into slices or smaller pieces
  • 1 medium onion, diced
  • 2 medium apples, peeled and finely diced
  • 1/4 L chicken or beef broth
  • 6 tbsp apple cider vinegar
  • 5 tbsp olive oil
  • 1 tbsp sugar
  • 1 TL Dijonsenf
  • 2 tsp salt
  • 1 TL Pfeffer
  • 1 tbsp leek, finely chopped
  • 4 slices of thick bacon, diced and fried

In a pot, bring the broth, vinegar, oil, mustard, sugar, salt, pepper and leeks to a boil to make a dressing. Meanwhile, place the cooled potatoes in a bowl with the remaining ingredients.   • 1 leek, diced

  • 1/2 tsp cumin seeds
  • 1 tsp peppercorns
  • 4 small pork knuckles
  • 300 ml dark beer
  • dark sauce thickener

If you are looking for Oktoberfest recipes for food that is traditionally Bavarian, the knuckle with its tender meat should not be missing. For this recipe idea, first preheat the oven to 190 degrees. Bring 2.5 liters of salted water to the boil in a large pot. Add the carrots, celery, leek, onion, bay leaves and spices and bring to the boil again. Now add the shanks and cook over low heat for about 1 hour and 15 minutes. Initially, foam will form on the water, which you should skim off.

Remove the meat from the broth, place it on a baking sheet and cut the crust several times with a knife. Now put the knuckles in the oven for 60 to 90 minutes, brushing them with the beer frequently during the first half hour. You can also add some broth to the tray. During the last 10 minutes you can also set the grill function to bake the skin of the knuckles extra crispy.

You can now mix the sauce that was created during baking with the beer and thicken it with the sauce thickener if necessary. Finally, season with pepper and salt and serve the knuckles with the sauce. In addition, you can prepare the potato dumplings from the following recipe as a side dish.
Tipp:You can freeze the broth in a mason jar and use it for any other dish. It is suitable as a base for stews or roast pork or for refining potato salad (see recipe above). Feel free to use it to prepare other Oktoberfest recipes.

Bavarian style dumplings

Dumplings are the perfect Bavarian side dish. That's why they shouldn't be missing from our list of Oktoberfest recipes. We have a recipe idea for both potato and bread dumplings, so you'll be spoiled for choice. But if necessary, you can of course prepare both variants at the same time.

Make the potato dumplings yourself

For 4 servings:

  • 1 kg floury potatoes
  • 150g wheat flour + more if necessary

Wash the potatoes thoroughly with their skin on and cook them, without peeling them, in salted water for about 25 minutes. Then let them drain and cool a little. Peel the potatoes and press them through a potato press into a bowl. Add the eggs, nutmeg, a little salt and two thirds of the flour. Knead it into a soft dough, to which you can add more flour if necessary if it is too crumbly or sticky.

Rub your hands with flour and form dumplings from the dough. Put the dumplings in boiling water, then cook them over low heat and uncovered for about 20 minutes. Remove the finished dumplings from the water using a perforated spoon and serve with any dish from our list of Oktoberfest recipes. If you like, you can garnish the dumplings with parsley or leek.

Simple Oktoberfest recipes – delicious bread dumplings

For 4 servings:

  • 4 wheat rolls (from the day before)
  • 2 Owner
  • 150 ml Fett
  • 1 large onion, diced

  • 1 tsp salt
  • Pfeffer
  • fresh parsley, chopped (approx. 30 g)

Bread dumplings as Oktoberfest recipes are no less easy to make: Cut the rolls into cubes. Mix the cubes with the salt. Melt the butter in a pan and fry the onion and parsley in it. In the meantime, heat the milk in a saucepan. But this should not boil! Now add the finished onions and milk to the rolls, mix everything together well and let the mixture steep for 10 minutes.

In the meantime, prepare a large pot of salted water and bring it to the boil. Until the water boils, you can whisk the eggs and add them to the rolls. Season with pepper and salt. The resulting dough should now be easy to shape into dumplings. If necessary, you can add a little extra warm milk if the dough is too dry or breadcrumbs if it is too wet.

Using wet hands, form about 8 dumplings. Then add these to the salt water and immediately reduce the heat. It is important that the dumplings are not cooked. Just let them steep in hot water until they are cooked. Depending on the size of the dumplings, this usually takes about 20 minutes. They then begin to swim on the surface.

Recipe with chicken

The fried chicken (in Bavarian “Hendl”) is one of the most popular and best-selling dishes at the Oktoberfest. So it's a great option if you're looking for Oktoberfest recipes that you want to prepare for your loved ones. For 2 to 4 servings:

  • 1 whole chicken

Preheat the oven to 160 degrees. Place a rack on a baking sheet (or place the baking sheet in the oven and the rack with the chicken directly above it later). When the chicken is baked, the juices should be able to drip off and be collected by the tray. Wash the chicken and pat it dry (e.g. with kitchen paper). Then season it both inside and out with paprika, pepper and salt. Then fill the inside with the parsley.

Heat the butter in a pan and let it brown slightly. Then briefly fry the paprika powder, pepper and salt in it. Brush the outside of the chicken with this mixture. Place the Wiesnhendl in the middle of the oven for 60 minutes and brush it again with the spice mixture every 15 minutes.   • 250 g Camembert (alternatively Brie at room temperature)
  • 1/2 tbsp softened butter
  • 120 g cream cheese
  • 2 tbsp chopped leeks
  • 1/4 onion, finely chopped
  • 1 teaspoon paprika powder
  • Beer (approx. 120 to 180 ml or until a spreadable mass is created)

Mash the cheese and butter with a fork and stir in the cream cheese. Then add the remaining ingredients (without the beer) and mix everything together well. Now gradually pour in the beer, stirring well at regular intervals until you get the desired consistency. Don't add too much beer to the cheese mixture! The Obatzda should be paintable and not melt. This spreadable cheese is a must at the Oktoberfest and is therefore also on our list of Oktoberfest recipes.

Oktoberfest burger recipe

Oktoberfest recipes forBurgers are also a great ideaespecially if you are hosting a party for the occasion. Here are the ingredients and the recipe:

  • 280 g minced meat
  • 2 rolls (preferably pretzel rolls), halved
  • 1 red onion, thinly sliced ​​and divided into rings
  • 1 sweet potato, cut into thin slices
  • 55g cheddar cheese, grated
  • 1 bunch of thyme, leaves picked off
  • 1 Tbsp whole grain dijon mustard
  • 180 ml milk
  • 1 EL Mehl
  • pepper and salt

Preheat the oven to 240 degrees. Spread the potato slices on a baking sheet and drizzle with oil. Mix the onion rings with oil in a bowl and then spread them on the tray. Season both with pepper and salt and bake for 19 to 21 minutes or until both products are soft. Take the tray out of the oven and sprinkle the products with a little thyme. Bake the rolls for 4 to 6 minutes.

While you are baking the onion and potato, you can prepare the cheese sauce by heating 1 teaspoon of olive oil in a saucepan and adding the flour, stirring constantly. After about 1 to 2 minutes, slowly add half the milk. Cook 2 to 3 minutes or until the mixture thickens. Season with pepper and salt and reduce the heat. Add the cheese over low heat, stirring constantly. If the sauce ends up being too thick, you can thin it with milk. Stir in the remaining thyme and season again with salt and pepper.

Prepare the burgers from the minced meat and salt and pepper, which you mix in a bowl. Form two meatballs with your hands and fry them in hot oil for 3 to 4 minutes on each side. Spread the mustard on both rolls, place the meatballs on top, spread the cheese and finally the onions. Serve the burgers with the potatoes as a garnish.

Tipp:If you want the burgers to be prepared even more quickly as an Oktoberfest recipe, you can simply place a slice of cheddar cheese on each of the still warm meatballs instead of the cheese sauce and let it melt slightly. You are welcome to top the burgers with sauerkraut instead of onions or in addition to the onions.

Fresh cucumber salad as a vegan option

  • 2 medium cucumbers
  • 1 medium onion, halved and sliced ​​(crescent-shaped)
  • 1 tbsp fresh dill, finely chopped
  • 240 ml white wine vinegar
  • 240 ml cold water
  • 3 tbsp erythritol (or other sweetener)
  • 1/2 tsp salt
  • 1/4 TL Pfeffer
