Although there are many tasty variations of this pasta dish, the authentic spaghetti carbonara original recipe only requires a few ingredients. For the classic carbonara, apart from spaghetti, salt and pepper, you actually only need three ingredients - pancetta, eggs and parmesan. How to prepare spaghetti carbonara the classic way – the ingredients
3 egg yolks
Parmesan
150 g pancetta (whole piece)
200 g Spaghetti
1 clove of garlic
Extra virgin olive oil
Salt and pepper to taste
Spaghetti Carbonara Recipe – The Preparation
Put the egg yolks and Parmesan in a bowl and mix well with a fork. Season with salt and pepper.
Cut the pancetta into small pieces.
Cook the spaghetti in boiling salted water until al dente. Please note the packaging instructions.
Drain the cooking water, reserving a cup of the spaghetti cooking water.
Put the cooked spaghetti back in the pot and drizzle with a little olive oil. Stir well.
Grease the bottom of a pan with a tablespoon of olive oil and heat to medium heat.
Add a crushed clove of garlic to the pan and leave it there for a minute.
Then add the pancetta. Fry them while stirring until crispy, about 4 minutes.
Now take the garlic clove out of the pan.
Then add the pasta to the pancetta.
Stir everything well so that the spaghetti absorbs the flavor.
Remove the pan from the heat and pour the cooking water over the spaghetti. Stir well.
Season with salt and pepper.
