Ingredients

Cake:

  • 200 grams of wheat flour
  • 100 grams butter, at room temperature
  • 100 grams of granulated sugar
  • 500 grams of fresh gooseberries
  • 2 egg yolks
  • 40 ml milk
  • 1 pack of vanilla sugar
  • 1/2 pack of baking powder

Kiss:

  • 130 grams of sugar
  • 2 egg whites
  • A pinch of salt

preparation

  • Wash the gooseberries and pat dry with a kitchen towel.
  • Preheat the oven to 200 degrees and line a 20 cm diameter springform pan with baking paper.
  • Place butter, sugar, egg yolks, milk and vanilla sugar in a large bowl and mix with a whisk until smooth.
  • Add wheat flour and baking powder and mix everything into a smooth dough.
  • Pour the dough into the baking pan and spread the gooseberries over it.
  • Bake the gooseberry cake for about 30 minutes.
  • In the meantime prepare the meringue. To do this, beat the egg whites in a large bowl with the salt until very stiff and add the sugar in the meantime.
  • Spread the egg whites on the warm cake.
  • Reduce the oven temperature to 180 degrees and bake the gooseberry cake with meringue for another 12-15 minutes.

  • 1 pack of vanilla pudding powder
  • 500 ml milk
  • 100 grams of granulated sugar
  • 250 grams of low-fat quark
  • 800 grams of gooseberries

Streusel dough:

  • 600 grams of wheat flour
  • 250 grams butter, cold
  • 250 grams of powdered sugar
  • 2 Owner
  • 1 pack of vanilla sugar
  • A pinch of salt

preparation

  • For the filling, mix the pudding powder with 40-50 ml milk and powdered sugar in a bowl until smooth.
  • Bring the remaining milk to the boil in a small saucepan.
  • Add the pudding mixture and simmer for 1-2 minutes, stirring occasionally.
  • Transfer the mixture to a bowl, wrap with cling film and set aside.
  • Wash the gooseberries and pat dry.
  • Preheat the oven to 200 degrees and lightly grease a baking tray with butter.
  • For the crumble dough, mix the wheat flour, vanilla sugar, powdered sugar and salt in a large bowl.
  • Add the eggs and butter in pieces and knead with your hands to form crumbles.
  • Spread about two thirds of the dough on the baking tray and press it down well.
  • Stir the quark into the pudding and spread it over the base.
  • Scatter the gooseberries over the top and cover with the remaining sprinkles.
  • Bake in the lower third of the oven for 40-45 minutes and allow to cool completely.
  • Sprinkle the gooseberry cake with pudding with powdered sugar if you like and enjoy!

  • 300 grams of sour cream
  • 100 grams of sugar

  • 1 pack of vanilla pudding powder
  • 70 ml milk
  • 400 grams of gooseberries

preparation

  • Knead all the ingredients in a bowl to form a smooth dough and form into a large ball.
  • Wrap the dough in cling film and put it in the fridge for about 30 minutes.
  • Preheat the oven to 180 degrees and lightly grease a 24 cm diameter springform pan with butter.
  • Roll out the dough into a round shape on a floured work surface and place it in the springform pan.
  • Pull up one edge and prick several times with a fork.
  • Put the pudding powder with the sour cream, quark, sugar, eggs and milk in a large bowl and stir until smooth with a whisk.
  • Spread the filling on the base and sprinkle gooseberries on top.
  • Allow to cool completely for about 45-50 minutes.
