Czech garlic soup: The ideal autumn recipe for the cold days

Anyone who has ever visited the Czech Republic and tried the traditional cuisine certainly knows Česnečka. This aromatic Czech garlic soup is wonderfully warming from the inside and is known to cure all kinds of ailments, from colds to hangovers.

In the fall I like to cook soups for my family. They are delicious, nutritious and are ideal if you can't get used to lower temperatures yet. Czech cuisine is known for its rich flavors and use of spices such as paprika, caraway and marjoram. Additionally, dairy products such as cheese and sour cream play an important role in many traditional Czech dishes. This fully applies to the classic garlic soup recipe. In addition to a tasty broth and a good amount of garlic, the spices and cheese are the most important ingredients for this soup recipe. Ingredients for the soup

  • 1/2 tablespoon butter
  • 8-10 cloves of garlic
  • 1.5 liters of chicken, beef or vegetable broth
  • 500 g (2 large) waxy potatoes
  • Salt and freshly ground black pepper
  • 1 teaspoon cumin seeds
  • 1 teaspoon dried marjoram
  • 3-4 slices of rye bread
  • 1 teaspoon olive oil
  • 120 g diced cheese, e.g. B. Emmental or Gruyère (optional)
  • 2 tablespoons finely chopped parsley

Notice: You can vary the amount of garlic according to your taste - whether more or less is up to you.

Prepare the ingredients: Peel the garlic cloves and crush them with the garlic press. Alternatively, you can chop them very finely. Then peel and wash the potatoes and dice them into small pieces. Dice the bread.

Now the cooking begins. First, melt the butter in a medium saucepan over medium heat. Add the garlic and saute until soft and aromatic, about 4-5 minutes.

Add the broth and bring to a boil over high heat.

After boiling, season the soup with salt and pepper and add the diced potatoes, marjoram and caraway. Reduce heat, cover pot and simmer for 15-20 minutes or until potatoes are tender.

In the meantime, preheat the oven to 200°C. Place the bread cubes on a baking sheet and drizzle with olive oil. Toss briefly with your hands and sprinkle a little salt on top. Roast for 10-15 minutes, stirring occasionally. The finished croutons should be golden brown and crispy. You can also prepare them in the air fryer.

Divide the finished soup into bowls. Serve garnished with chopped parsley and rye bread cubes. For an authentic recipe, stir in cubed cheese. The hot soup softens it and gives it a great additional flavor. Enjoy it!
