Make your own kombucha: application and recipe

What is Kombucha? Never heard of it? It has been known in Asia for thousands of years. In recent years it has become valued worldwide as a natural and extremely important food. This is a valuable fungus that is rich in bacteria and yeast. It is left to ferment with regular tea for two weeks or more. The result is a completely natural fruity fitness drink that is rich in valuable ingredients like no other. In this way you can supply the body with various enzymes, antioxidants, tannins, organic acids and vitamins. Make your own kombucha: How to use it

In order to make Kombucha tea or drink, a one-time purchase of the mushroom is required. With proper breeding, it grows and reproduces on its own. The mushroom looks a bit ugly at first and later. However, when you consume the finished drink for the first time, you will quickly be amazed by the unique fruity taste. In addition, isthe teareally healthy and is now considered a fitness drink, because all of the valuable ingredients contained in the mushroom are almost completely retained in the drink.

Biologically speaking, kombucha is actually not a mushroom. However, he is known as such everywhere. To make it yourself, you need at least one Kombucha mushroom and a nutrient solution made from a conventional sweetened tea. Depending on your personal preferences, you can use black tea, green tea, herbal or fruit tea. The mushroom is placed in the tea. Within a few days you notice a new fungus floating in the liquid and getting bigger and bigger. In this way you have already made your first kombucha yourself. It should be stored in a glass or ceramic container with at least 100 ml of liquid.

Recipe and instructions

If you want to make Kombucha tea yourself, you first need a Kombucha mushroom and at least 100 ml of ready-made Kombucha drink. This amount is enough to make one liter of new drink. The following ingredients are also required:

  • 1 liter of water
  • about 8 g of tea
  • 90 – 100 g sugar
  • a vessel made of glass or ceramic
  • a cotton cloth and a rubber ring for covering and sealing

First you have to boil the water and let the tea (about 8 g of tea per 1 liter of water) steep for 15 minutes. Then completely dissolve the sugar (90 – 100 g sugar per 1 liter) in the liquid. The sweetened tea is allowed to cool and then placed together with the Kombucha mushroom and the brewing liquid in a clean glass or ceramic container. The container is then covered with a cloth and closed with a rubber ring.

The container should be placed in a warm place at least 21 °C and should not be moved or shaken for the first day. After about 10 – 16 days, the homemade kombucha drink is ready. It's best to fill it in glass bottles and keep it cool. You should leave the Kombucha mushroom and about 100 ml or a little more liquid for the new batch.

Make your own kombucha vinegar

To make vinegar yourself, you also need a Kombucha mushroom. You should also put a lot of sugar in a container, about 110 g per liter, and let it stand for 4 - 6 weeks. The longer the fermentation time, the more acidic the vinegar becomes. This is characterized by an extremely fine and spicy taste, which is comparable to a valuable apple cider vinegar or balsamic vinegar and can be used for salads, sauces, dressings and, for example, for spicy kombucha ketchup. Herbs and spices such as dill, juniper berries, thyme, mustard seeds, sage and rosemary are ideal for a dressing with kombucha vinegar.
