What is silken tofu?

Just like regular tofu, silken tofu also consists of soy, water and coagulants. However, silken tofu only contains around 20% soybeans and the water content is significantly higher at 80%. While classic tofu is firm, silken tofu is characterized by a softer and silky consistency - hence the name. Visually it actually resembles Greek yogurt or quark. Thanks to its creamy texture, silken tofu is perfect for preparing various desserts, dips, soups and creams.

Ingredients for 2 servings

  • 1 medium onion, chopped finely
  • 180 grams mushrooms, cut into thin slices
  • 380 grams silken tofu
  • 30 grams of nutritional yeast
  • 1 teaspoon each garlic powder, paprika powder and turmeric
  • Salt and pepper

  • Lightly spray a nonstick skillet with cooking spray and place over medium-high heat.
  • Sauté the onions in it for 2-3 minutes until translucent.
  • Add the mushrooms and spices and fry for 3-4 minutes, stirring occasionally.
  • Add the silken tofu to the pan and lightly crumble it with a wooden spoon.
  • Increase the heat and cook until all the liquid has evaporated.
  • Divide between 2 plates and sprinkle with nutritional yeast.

Vegan "Feta" Pasta

This vegan feta pasta is a delicious twist on the viral recipe and clear proof that silken tofu recipes are anything but bland and boring. It takes 10 minutes to prepare, making the recipe perfect for a quick weeknight dinner. And if you like experimenting in the kitchen, here's how you canMake your own vegan cheese.

Ingredients for 4 servings

  • 460 grams of silken tofu
  • 230 grams of whole grain pasta of your choice
  • 300 grams of tomatoes
  • 60 grams of spinach
  • 2 cloves of garlic, finely chopped
  • 1 teaspoon each dried basil, oregano and paprika powder
  • 20 grams of nutritional yeast
  • Salt and pepper

  • Cook pasta al dente according to package instructions and drain well.
  • In the meantime, for the vegan feta, add the silken tofu, nutritional yeast and spices to the blender and puree until fine.
  • Heat a large skillet over medium-high heat.
  • Cut tomatoes into small pieces and cook for 5-6 minutes, stirring occasionally.
  • Add spinach and cook for another 2-3 minutes.
  • Then add the pasta and silken tofu mixture and mix well.

Ingredients for 4 servings

  • 150 grams of dates, pitted
  • 250 grams of silken tofu
  • 140 grams of dark chocolate
  • 120 aquafaba (the liquid from a can of chickpeas)
  • 1 TL Cream of Tartar

  • Pour hot water over the dates and let stand for 10 minutes.
  • Melt chocolate in a water bath or in the microwave.
  • Drain the dates well, put them in the blender and puree until you get a sticky mass.
  • Add the melted chocolate and silken tofu to the blender and puree until fine.
  • Place the aquafaba and Cream of Tartar in a large bowl and beat with a hand mixer for 3-4 minutes until fluffy.
  • Carefully fold in the chocolate mixture with a wooden spoon and mix well.
  • Divide between 4 glasses and place in the fridge.
  • Garnish with toppings of your choice and enjoy!

Vegan cheesecake with silken tofu

Cheesecake base:

  • 100 grams of coconut oil
  • 250 grams of vegan cookies of your choice

Cheesecake filling:

  • 80 grams of cocoa butter
  • 350 grams silken tofu
  • 260 grams of raw cashews, soaked in water for 8 hours
  • 160 grams of maple syrup
  • 40 ml freshly squeezed lemon juice
  • The grated zest of 1 lemon
  • 1 TL Vanilleextrakt

  • Line a round baking pan with baking paper.
  • For the base, melt coconut oil in the microwave.
  • Crumble the cookies into the mixer and mix with the coconut oil to form a sticky mixture.
  • Pour the mixture into the baking pan and press until smooth.
  • Melt the cocoa butter in a water bath and let it cool slightly.
  • Drain the cashews well.
  • Add silken tofu, cashews, maple syrup, lemon juice and zest, and vanilla extract to blender and puree until smooth.
  • Finally add melted cocoa butter and mix well.
  • Spread the filling evenly over the base and place in the refrigerator for at least 4 hours or overnight.
  • Garnish with fresh berries if desired and your vegan cheesecake with silken tofu is ready!
