- 1 medium onion, halved
- 30 grams of yeast flakes
- 10 grams whole Misopaste
- 500ml + 250ml water
- 50 grams coconut oil, melted
- 10 grams of agar-agar
- 1/2 teaspoon each garlic powder and turmeric
- Vegetable oil for greasing
Preparation:
- Add cashew nuts, yeast flakes, miso paste, coconut oil, onions, 500 ml water and spices to the blender and puree until creamy for 2-3 minutes.
- Bring 250 ml of water and agar-agar to the boil in a small saucepan, stirring constantly with a whisk.
- Simmer for 2 minutes and add to the cashew mixture in the blender. Stir for another 1 minute.
- Lightly grease a suitable mold with vegetable oil and pour the cashew mixture into it.
- Allow to cool completely and then place in the refrigerator overnight.

- 130 grams cashew nuts, soaked in water
- 300 grams of vegan yogurt
- 60 ml soy milk, unsweetened
- 35 Grams Tapiocamehl
- 10 grams of nutritional yeast
- 10 grams of agar-agar
- 20 grams coconut oil, melted
- 2 tbsp lemon juice, freshly squeezed
- 1 tsp salt
Preparation:
- Half fill a medium bowl with water and add 5-6 ice cubes.
- Drain the cashew nuts and collect the water.
- Add the nuts, vegan yogurt, soy milk, coconut oil, tapioca flour and lemon juice to the blender and puree on high.
- Heat 120 ml water in a saucepan over medium heat and stir in agar agar. Simmer for 3-4 minutes, stirring occasionally.
- Add cashew mixture to pot and cook for 5-6 minutes, stirring constantly, until mixture thickens and becomes stretchy.
- Scoop out the mixture with an ice cream scoop or similar and place the balls in the ice water.
- Cover and place in the fridge for 3-4 hours and you're done - you can make vegan mozzarella yourself so quickly.
Recipe for vegan cheddar without nuts

Ingredients:
- 120 grams of chickpea flour
- 40 grams of yeast flakes
- 560ml water
- 15 grams of mustard
- 10 ml apple cider vinegar
- 30 Grams Tahini
- 1 tablespoon each of paprika and onion powder
- 1 tsp salt
Preparation:
- Whisk together the chickpea flour, yeast flakes, salt and spices in a large bowl and add 240 ml water.
- Stir until smooth and then add mustard and vinegar.
- Bring the remaining water to the boil, reduce the heat and add the mixture with the tahini.
- Cook, stirring constantly, for 5-6 minutes until the mixture thickens.
- Allow the vegan cheddar to cool completely to room temperature and then place it in the refrigerator for 2-3 hours until it solidifies.
