Almost everyone loves mayonnaise and is of the opinion that it should definitely not be missing in the fridge. And even though it's so easy to make yourself, we always buy it ready-made in the store. The homemade version is much healthier than the store-bought one. You can avoid preservatives and colorings and know exactly what is contained in your Creme F. Also, how about trying out vegan mayonnaise? Since it is prepared without eggs, it lasts longer and without the use of preservatives.

Healthier than commercially available
Each of the recipes is also very quick to prepare. Just make sure that you have all the products in the house so that you don't have to go to the store. Enjoy it!
Recipes with different ingredients
In principle, you can use any plant-based milk you like. However, soy milk is most commonly used because its consistency is most similar to cow's milk. Add any vegetable oil. Sunflower oil is the most neutral in taste. You can also try other varieties if you like. Apple cider vinegar is also a typical ingredient in the normal version. Instead, lemon juice is also very suitable. This one is healthier.
Vegan mayonnaise with rapeseed oil
Since this vegan mayonnaise splits again after a while, it is best to consume it straight away. If there is still something left over, that is of course no problem. It will only be necessary to mix them again before the next consumption. Use organic canola oil.
– 1 cup rapeseed oil
– 1/2 cup soy milk
– 1 teaspoon freshly squeezed lemon juice
– 1 pinch of salt
– 1 pinch of mustard powder or 1 teaspoon of ready-made mustard
Mix the soy milk with the lemon juice in a blender. Mix for about half a minute. Then, while continuing to mix, gradually add the oil. The cream should now slowly become a little thicker. Finally, just add the salt and mustard to taste.
Use olive oil to thin
This variant is similar to the first, but the products do not separate from each other over time and it is also slightly thicker. It is characterized by a slightly sweet taste and is ideal for seasoning salads or sandwiches.
– 3/4 cup soy milk
– 1 1/2 tbsp fresh lemon juice
– 1 TL Dijon-Mustard
– 3/4 cup olive oil
– 1 pinch of salt
– 1 Prise Pfeffer
Mix the soy milk, lemon juice and this time also the mustard again for 30 seconds. Then add the olive oil little by little and season with salt and pepper. If one pinch at a time isn't enough for you, you can of course add more. The vegan mayonnaise should suit your taste. Hot peppers or chipotle peppers also work wonderfully as a seasoning.
Recipe idea with tofu
This recipe is very close to the normal one. It is the best option to serve when you also have non-vegan friends over. This version is thicker than the first two.
– 115 g Seidentofu
– 2 tsp fresh lemon juice
– 2 TL Dijon-Mustard
– 1 cup vegetable oil
– kosher salt
Mix the tofu with the lemon juice and mustard. You can also use a hand blender. Mix until a smooth mixture is created, i.e. the tofu has dissolved. Finally, the selected oil and spices are gradually added again.
Recipe with apple cider vinegar
– 1 cup (220 g) unrefined sunflower oil
– 1/2 cup (120 g) unsweetened soy milk
– 2 tsp apple cider vinegar
– Sea salt
Put all the ingredients in a container and mix them well, preferably with a mixer, until you get a thick consistency. In between, taste the vegan mayonnaise to find the right amount of salt. If it is too thick for you, you can add a little soy milk. If you want it to be thicker, use more oil.
Spicy with parsley
With this recipe you will receive a spicy vegan mayonnaise, which you can also season with other ingredients as desired. Wasabi, chives, dill or dried tomatoes are suitable. You'll love the recipe so much that you'll never go back to store-bought again.
– 1/2 cup soy milk
– 1/2 tsp sea salt
– 1 TL Senfpulver
– 2 tsp garlic powder
– 2 tsp apple cider vinegar
– 2 TL Agave
– 1 cup organic canola oil
Put all the ingredients except the oil in the blender and mix everything together. As always, the oil is added at the end as it thickens. With these ingredients you will get approximately 1 1/2 cups of vegan mayonnaise. By simply doubling the products you can increase the quantity.
Salad with Mayonnaise
The homemade products, which are vegan, are also wonderful for preparing salads. For example, make a vegetable salad with mayo. You get a delicious and healthy starter or a snack in between.
Sandwiches
Sandwiches are also a wonderful snack, but are also very suitable for breakfast. Top the bread (preferably whole grain) with fresh seasonal vegetables. Make sure they are organic vegetables. Small appetizers are also a great idea for parties and are transformed into a special treat with the vegan mayonnaise.
