Ingredients for 3 large dessert glasses:
3 medium oranges + juice of half an orange
250 g Mascarpone
125 ml cold 30% cream
1/2 teaspoon vanilla extract
2 tablespoons honey
1/2 teaspoon cinnamon
large pinch of cardamom
large pinch of aniseed
Chocolate-covered gingerbread cookies (purchased or homemade)
Preparation:
- Fillet the oranges to remove the less edible white parts of the fruit.
- Place mascarpone, honey, orange juice, spices and vanilla extract in a bowl. Mix lightly and slowly add the cream. Mix on high until the mixture begins to visibly thicken.
- Now layer everything in the dessert glasses. Break the cookies into pieces and distribute them among the glasses, then top with a few orange fillets and a dollop of mascarpone cream. Then apply the second layer in the same order - gingerbread, oranges, cream.

For the tart base:
360 g Flour
125g butter, cut into small pieces
1 teaspoon sugar

For the filling:
1 large orange
60g sugar or more to taste, depending on the type of orange
Preparation:
1. Grease a cake or tart pan with butter.
2. In the bowl of a stand mixer, combine the flour, butter, sugar and salt. Gradually add the ice water and knead until a crumbly but elastic dough forms (you may not need water - this depends on the size of the egg, the moisture content of the flour and the quality of the butter).
3. Place the crumbly dough into a greased springform pan. Spread the dough into the mold with your hands and press it firmly. Form a low edge. If desired, use a cookie cutter or fork to make decorative notches around the edge of the pan.
4. Preheat the oven to 180 degrees.
5. Now prepare the filling. Wash the orange thoroughly with a kitchen sponge and hot water. Peel and fillet the orange. Place the orange segments with the sugar in the same bowl of the food processor and puree until smooth (no need to wash the bowl after making the batter).
6. Spread the filling onto the dough.
7. Bake for about 35-40 minutes.
8. Allow to cool. If desired, sprinkle with powdered sugar before serving.
Orange Panna Cotta

Ingredients:
250 ml Sahne 15 %
4 tablespoons granulated sugar
1/4 teaspoon vanilla sugar
1-2 medium oranges
10 g Gelatine
Preparation:
1. Place 2 tablespoons of granulated sugar and the vanilla sugar in a small saucepan with a handle. Pour in the cream and place the pot on the stove. Heat slowly over low heat. *Remember that the liquid with the gelatine must not boil, otherwise it will lose its ability to gel.
2. Meanwhile, rinse the orange carefully with hot water and rub off the peel. Add the orange peel to the cream and bring the whole thing to a temperature of 70-80 degrees. Turn off the heat and dissolve the gelatine completely while stirring. Let cool for about 20 minutes.
*If you don't like the orange peel pieces in the dessert, you can pour the liquid through a fine-mesh sieve in this step.
3. Pour the cream mixture into silicone molds and place in the refrigerator for at least 1 hour so that the panna cotta sets.
4. In the meantime, fillet the oranges, remove the seeds and cut into small pieces. Place the oranges in a bowl and add 2 tablespoons of granulated sugar. Cook over medium heat until almost caramelized, about 8-10 minutes.
5. Turn the well-chilled orange panna cotta onto plates, garnish with the caramelized oranges and serve. This Christmas dessert looks so beautiful!
