Preparation:1 hour 35 minutes
Baking time:5-6 minutes
Servings:30 pieces
Ingredients:
- 175g brown sugar
- 160 ml sugar cane syrup
- 100 g Butter
- 2-3 tsp ground ginger
- 350g flour, plus extra for dusting
- 1 TL Natron
- 1 large egg, lightly beaten
- hard candies with fruit flavor (without filling)
- White glaze, for decorating
Preparation:
- You will need star or snowflake cutters.
- Heat the cane syrup and butter in a pan until melted. Mix the ginger and flour in a large bowl and make a well in the center. Add the baking soda to the melted mixture, stir to combine - it will bubble a little - and then add it to the flour mixture along with the egg. To combine everything, stir well. The mixture is still soft but will firm up as it cools.
- Place the dough in a box or freezer bag and refrigerate for at least an hour until it is firm enough to roll out. The dough can be stored in the refrigerator for up to a week or frozen for three months.
- Preheat the oven to 190 °C fan oven. Roll out the dough onto a lightly floured surface and cut it in half. Knead the first piece briefly, then roll it out to a thickness of 2 mm. Using the snowflake or star cutters, cut out shapes about 10cm in diameter and place them on a baking tray lined with baking paper. Leave some space for them to rise. Using a different cutter, cut a window about 2 inches in diameter out of each piece and place a piece of candy in the center.
- If the candies are large, crush them first - you need to estimate the size of the hole.
- Bakethe Christmas cookiesCook in batches for 5-6 minutes, until slightly darkened and the candies are melted. Allow them to cool and harden completely. If you want, you can decorate the cookies with white icing.
