Simple recipe for Pasta al Limone with shrimps

You will love this lemon pasta with sautéed shrimp. This classic Italian pasta dish is a perfect,simple and delicious recipefor a dinner that can be prepared in less than 30 minutes.

Ingredients for 4 servings:

  • 500g pasta
  • 500 g shrimp, peeled and deveined
  • 2 teaspoons olive oil
  • 1 teaspoon salt

For the lemon pasta sauce:

  • 2 tablespoons butter
  • 2 crushed garlic cloves
  • 200g whipped cream
  • 1 – 2 lemons with juice and peel
  • Salt and black pepper to taste
  • 70 g grated Parmesan cheese
  • Parsley for serving

Preparation:

  • Bring a large pot of salted water to a boil over medium-high heat.
  • Put the pasta in the pot with water and cook until al dente - depending on the shape, 8 - 10 minutes. The noodles should be pleasant to eat: soft but firm.
  • After cooking, reserve 240 ml of pasta cooking water and drain the pasta.
  • Peel and debone the shrimp, then pat dry with paper towels. Place in a medium bowl, drizzle with a teaspoon of olive oil and season generously with salt.
  • Heat a large skillet over medium-high heat. Add the prawns and fry for a minute per side, then remove and set aside.
  • In the same pan, melt butter or add a few tablespoons of olive oil. Add the garlic and saute for a minute until fragrant.
  • Add the cream, lemon juice (to taste) and lemon zest and season. Simmer for a few minutes until the sauce has thickened slightly.
  • Toss the drained pasta and shrimp into the lemon sauce and add a splash of the reserved pasta water. Stir the sauce and add more pasta water if necessary.
  • Add plenty of grated cheese, toss and serve garnished with fresh parsley.
