The zucchini salad with tomatoes is a delicious summer salad that you can't get enough of. It is very easy to prepare, but looks elegant and tastes delicious. Serve this dish ashealthier alternativewith the usual side dishes containing mayonnaise. You can also add prosciutto if desired or serve the salad vegetarian.
Ingredients
For the dressing:
- 120 ml olive oil
- 60 ml red wine vinegar (or white wine vinegar)
- 1 garlic clove, minced
- 2 tablespoons grated Parmesan cheese
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- 1 – 2 teaspoons of honey
- Salt and ground black pepper
For the salad:
- 100 g Ham
- 3 medium zucchini, cut into spirals
- 2 large ears of corn, grilled and the kernels removed
- ½ red onion, thinly sliced
- 230 g mozzarella balls
- 150 g cherry tomatoes, halved
- 10g fresh basil, coarsely chopped, plus more for garnish
- Salt and black pepper, to taste
preparation
- First prepare the dressing: the ingredients should be mixed in a bowl. Season the dressing with half a teaspoon of salt and a quarter teaspoon of pepper. Mix the ingredients together thoroughly with a whisk. You can change the sweetness with honey, salt and pepper.
- If you want to add prosciutto: Place it in the 200 degree oven. Line a baking tray with baking paper. Spread the prosciutto in a single layer without overlapping the slices. Roast it in the oven for 9 – 11 minutes. Then take the baking sheet out of the oven, place it on a wire rack. Let the prosciutto cool.
- Mix the zucchini, corn, red onion, mozzarella, cherry tomatoes and basil in a large bowl. Add some black pepper, but no salt. Mix all ingredients well.
- Pour some dressing over it and toss all the ingredients well. You can garnish the salad with the crispy prosciutto and more basil.
