Onion cake with shortcrust pastry: Simply bake the autumn classic

Who doesn't like the tempting taste of caramelized onions complemented by the crispy bacon and together they create a wonderful contrast. Everyone seems to like the simple recipe, whose main ingredients are white onions, bacon and a good shortcrust pastry.

Onion cake with shortcrust pastry: Make the delicious recipe yourself

This savory cake with a crispy crust and juicy filling with a subtle onion flavor tastes great warm as a delicious lunch or light dinner, or cold to take away. If you want, you can also use ready-made shortcrust pastry, which speeds up preparation considerably.

Ingredients for onion cake

For the dough:

  • 225 g Flour
  • 1 No
  • 1 pinch of salt
  • 125 g cold butter, cut into pieces
  • some ice cold water

For the topping:

  • 2 large oneswhite onions
  • 150 g bacon, diced
  • 50 g Butter
  • 3 Owner
  • 100 ml milk, cold
  • 100 g Crème fraîche
  • 1 EL Mehl
  • Salt
  • Pfeffer
  • 2 pinches of ground nutmeg

Prepare classic onion cake with shortcrust pastry

  • Put some of the flour in a bowl and add the egg, salt and diced cold butter.
  • Stir with a spoon and gradually add more flour and a little water. Continue stirring the mixture until a dough forms.
  • Place the dough on a work surface and knead it briefly until it binds. But don't do this for too long so that it doesn't get too warm. If it's too sticky, add some more flour.
  • Form the soft dough into a ball and wrap it in cling film.
  • Let the shortcrust pastry cool in the refrigerator for about half an hour.
  • Meanwhile, cut the onions into thin strips and the bacon into small cubes.
  • Preheat the oven to 180 °C top and bottom heat.
  • Heat the butter and fry the onions over low heat until golden, about 20 minutesand caramelized.
  • Season them with salt, pepper and nutmeg.
  • Add 1 tbsp flour, stir well and continue frying for a minute.
  • Remove the pan from the heat, pour the cold milk on it, add the crème fraîche and stir well.
  • Place the pan back on the stove and simmer gently for 3-4 minutes.
  • Set the onion mixture aside to cool.
  • In another dry skillet, fry the bacon cubes over medium heat for 3-4 minutes until lightly browned.
  • Crack the eggs and stir them into the onion mixture.
  • Add half of the bacon cubes and stir again.
  • When the dough has cooled, roll it out on a floured surface into a circle slightly larger than the sheet.
  • Grease the baking tray with butter and place the dough in it, raising an edge.
  • Prick it in several places with a fork.
  • Pour the mixture onto the dough and top with the remaining bacon.
  • Bake the onion tart with shortcrust pastry for 20-25 minutes until the top is nicely browned.
  • Allow it to cool slightly before serving.

Useful tips

  • If you prefer the onion cake vegetarian, simply leave out the bacon.
  • Before baking, sprinkle the onion cake with a type of cheese you like, such as cheddar cheese, mozzarella, Gorgonzola or Parmesan.
  • Once baked, the cake can be kept at room temperature for up to 2 days.
