  • 500 g Pasta (z. B. Spaghetti)
  • 100 g of unsalted pistachios, peeled
  • 80 g Butter
  • 100 g Parmesan
  • 1 organic lemon
  • 2 cloves of garlic
  • Salt & pepper
  • Some pasta water

preparation

  1. Bring a large saucepan with water to a boil, salt well and cook the pasta according to package instructions al dente.
  2. In the meantime, the pistachios in a blender or mortar shredly.
  3. Melt the butter in a large pan over medium heat. Finely chop the garlic and sweat briefly in the butter.
  4. Add lemon abrasion and the chopped pistachios and roast for one or two minutes so that the flavors unfold.
  5. Put the al dente cooked pasta directly out of the pot into the pan with a drawing trowel. Add a little pasta water to achieve a creamy consistency.
