Recipe for low carb rascals

You need these ingredients (for approx. 30 pieces):

  • 120 g Mandelmehl, entölt
  • 150 g butter, soft
  • 180 g Xylit (here at Amazon*)
  • 15 g potato fibers + more for rolling out
  • 6 egg yolks
  • 10 g Vanille-Xylit
    Ingredients for the filling:
  • 60 g sugar-free strawberry fruit spread
  • some xylitol “like powdered sugar” for dusting

Preparing low carb rascals: Here's how it works:

Mix all the ingredients together in a bowl and knead into a firm dough.
Form the dough into a ball, wrap it in cling film and chill in the fridge for an hour.

Do not roll out the dough too thin between two silicone baking mats or sheets of baking paper. Dust well with potato fibers so that the dough doesn't stick.
Using Spitzbuben cookie cutters, cut out 30 bottoms and tops and place them on a baking tray lined with baking paper.

For8-10 minutesat175 °C top/bottom heatBake and let cool.
Heat the fruit spread in the pot. Spread the fruit spread on the bottoms of the rascals, then assemble them with the tops and let them cool.

Last but not least, dust with powdered xylitol and place the finished cookies in a tin.

Tipp:If you don't have a rogue cookie cutter at hand: cut out 60 circles, 30 of which have holes using small star cutters.
