After work, you don't feel like complicated recipes? Then this creamy peanut soup is just right for you. Simply snip the ingredients, broth and peanut butter and the pot does the rest.

I love peanut butter! On the bread, as sweetOr delicious dip to my summer rolls. In soups and stews, such a spoonful peanut butter is also really good and ensures a creamy consistency.

One of my favorite after-work recipes is this African peanut soup. It is rich in vegetables, super nutty and the roasted peanuts ensure an extra portion of crunch.

Whether you are wrapped them wrapped in a blanket on the sofa while raining outside or preparing a large pot for the whole family: this African peanut soup belongs on your cooking plan.

What do I love in vegetable soups? You can just see what the refrigerator has to offer or urgently need to be used up. In my African peanut soup, I particularly like cabbage and carrots. Broccoli, spinach or peppers also make up for it really well.

Ingredients for approx. 4 portions:

  • 350 g white cabbage
  • 2 sweet potatoes
  • 2 carrots
  • 1 onion
  • 1 clove of garlic
  • 400 g of shaped tomatoes (from the can)
  • 400 g coconut milk
  • 500 ml vegetable or chicken broth
  • 4 tablespoons of peanut butter
  • 200 g roasted peanuts
  • 2 away
  • 2 TL Currypulver
  • 2 TL paprika powder
  • 1 teaspoon of ground cumin
  • 1 pinch of sugar
  • Salt and pepper

And so it is done:

1. Peel the sweet potatoes, carrots and onions and cut them into rough pieces. From the white cabbage, remove the outer, thick leaves, quarter, wash, remove the stalk and cut into strips. Chop the clove of garlic or add a garlic press.

2. Heat the oil in a large saucepan, braise the onion until glassy. Then add the garlic, white cabbage, carrots and sweet potato and roast a few minutes with the cabbage.

3. Season the vegetables with curry powder, paprika powder, cumin and a pinch of sugar. Then deglaze with broth and coconut milk. Finally, stir in the spacious tomatoes and the peanut butter. Bring to the boil briefly, then over medium heat about30 minutesLet simmer.

4. Finally, taste the soup with salt and pepper and serve as topping with the roasted peanuts. You can use a rolling pin or mortar beforehand (You can get a granite mortar here at Amazon*) Shoot something. Bon appetit!
