American hamburger soup with minced meat: super easy recipe

Rich in vegetables, spicy and hearty: everything we want in a warming soup comes together here. You can also prepare them in advance and heat them up the next day for a quick lunch or for lunch at work.


Ingredients for 6-8 servings:

  • 2 tbsp olive oil
  • 1 large onion
  • 2 stalks of celery
  • 500 g minced beef
  • Salt and pepper
  • 1 tbsp paprika powder
  • 1 tsp garlic powder
  • 2 tsp dried oregano
  • 800 g diced tomatoes
  • 800 ml beef or vegetable stock
  • 2 large potatoes
  • 500 g mixed frozen vegetables

Preparation:

1. Peel the onion, peel the potatoes, wash the celery. Cut everything into small cubes. Heat olive oil in a large pot over medium heat. Add the onion and celery and sauté for a few minutes until the onion is translucent.

2. Then add the minced meat and fry well. Season with salt, pepper, oregano, garlic powder and paprika powder.

3. Now add the chopped tomatoes and potatoes and mix everything well. Pour in the beef or vegetable broth and bring the soup to the boil. Reduce heat and simmer for about 15 minutes.

4. Then stir the frozen vegetables into the soup and simmer over medium heat for another 15 minutes until the vegetables are soft. It goes well with freshly baked baguette.

Tipp:We find a vegetable mixture of green beans and carrots particularly delicious in our hamburger soup. But you can also add peas, peppers or corn. Just see what your freezer or vegetable drawer has in store!
