Perfect for stressful days: You have to know the recipe for this creamy lemon pasta with chicken.
After a long day, I want a meal that is uncomplicated, doesn't involve a lot of washing up, and still tastes amazing. That's where this one-pot lemon pasta comes into play. Everything – from the pasta to the sauce to the juicy chicken – is prepared in a single pot.
The combination of a wonderfully creamy lemon sauce, tender chicken and the perfect balance of freshness and spice makes this dish a real comfort food that can be on the table in about 30 minutes. Simply perfect for the end of the day.
Recipe for quick lemon pasta with chicken
Ingredients for approx. 2 people:
- 2 tbsp olive oil
- 2 chicken breast fillets, cut into small pieces
- 1 garlic clove, finely chopped
- 300 g Penne or other pasta
- 500 ml chicken broth
- 200 ml Sahne
- 1 organic lemon (zest and juice,Shop a kitchen grater on Amazon here*)
- 50 g Parmesan, grated
- Salt and pepper
- Fresh parsley (optional)
Preparation:
1. Heat the olive oil in a large pot or deep pan. Fry the chicken pieces over medium heat until golden brown all over. Season with salt and pepper and then remove from the pot.
2. In the same pot, briefly sweat the garlic until it smells fragrant (do not brown!). Add the pasta and pour over the chicken broth and cream. Add lemon zest and bring the liquid to a boil. Simmer, stirring regularly, until the pasta is al dente (about 10-15 minutes).
3. Add the browned chicken back to the pot and mix well. Add lemon juice and stir in the Parmesan until a creamy sauce forms. Season with salt and pepper.
4. Arrange the pasta on plates, sprinkle with freshly chopped parsley if desired and enjoy.
