Cinderella soup is the perfect winter treat. It warms you on cold, wet days, is easy to prepare and the ingredients are inexpensive. Plus, it's quick to prepare and fills many hungry mouths.
Another plus point: thanks to the vegetables and lentils used, the soup contains a lot of fiber and iron.
By the way: Some people also prepare Cinderella soup with minced meat or potatoes. Since the origin of the name is not clear, there are many variations of Cinderella soup. So you can swap or add the ingredients as you wish and still call the soup that way. If you follow a vegetarian or vegan diet, you can simply leave out the sausages and bacon.
Cinderella Soup: Quick Recipe
You only need a few ingredients for the spicy, hearty stew. Since you can swap out the vegetables and meat as you like, you can also use the recipe to use up leftovers.
You need these ingredients:
- 2 packs of soup greens
- 300g lentils
- 500g potatoes
- 1 Lorbeerblatt
- 1 TL Thymian, getrocknet
- 2 liters of vegetable broth
- 1 onion
- 100 g Speck
- 10 sausages
And this is how the preparation works:
1.Prepare lentils. If you use fresh ones, you have to cook them first. If you take some out of the can, you should rinse them first. Of course, the soup is quicker to prepare with canned lentils.
2.Wash the vegetables from the soup greens (carrots, celery, leeks), peel them if necessary, cut them into pieces and put them in a large cooking pot. Add lentils.
3.Also add the bay leaf and thyme and pour the broth over the vegetables. Now bring everything to the boil, turn down the temperature a little and let the whole thing simmer for about 30 minutes.
4.Peel and dice onion. Dice the bacon too (but not too finely). Fry both together in a pan and then add them to the soup.
5.Cut the sausages into pieces and add them to the soup shortly before the end of the cooking time. Let everything simmer together again for about 10 minutes. A piece of baguette with butter goes perfectly with Cinderella soup. Enjoy it!
