Winter is soup time: warm up with this delicious broccoli and parmesan soup.
When it's cold and uncomfortable outside, there's nothing better than warming up with a warm bowl of soup, right? What's particularly great: Soups aren't just real soul warmers. Packed with delicious vegetables, they are also a great source of vitamins during the cold season.
Broccoli, for example, scores with vitamin C, which strengthens our immune system, and vitamin K, which is good for our bones. This creamy broccoli parmesan soup is also quick to make and perfect for anyone on a low carb diet.

Broccoli Parmesan Soup Recipe
Ingredients for approx. 4 servings:
- 500 g broccoli (fresh or frozen)
- 1 onion
- 1 clove of garlic
- 750 ml vegetable broth
- 200 ml cream (or cooking cream as a lighter version)
- 50 g freshly grated Parmesan
- 2 tbsp olive oil
- Salt, pepper, nutmeg
- Optional: 1 pinch of chili or paprika powder
Preparation:
1. Wash the broccoli and divide it into small florets. Peel the stalk and cut it into cubes. If you use frozen broccoli, just let it thaw slightly.
2. Peel and finely chop the onion and garlic clove.
3. Heat the olive oil in a large pot and sauté the onion and garlic until translucent.
4. Add the broccoli and sauté briefly, then pour in the vegetable broth. Cover and simmer for about 10-15 minutes until the broccoli is tender.
5. Remove the soup from the heat and mix with a hand blender (this is a customer on Amazon*) puree finely. For a coarser consistency, you can remove a few broccoli florets before pureeing and add them back later.
6. Stir in the cream and Parmesan until the cheese is melted. Season with salt, pepper and a pinch of nutmeg. For a slightly spicy note, you can also add a pinch of chili or paprika powder. Then heat the soup again and serve, enjoy your meal!
Tipp:If you don't eat a low-carb diet, serve it with baguette - perfect for wiping out the soup bowl at the end.
