Fruity, fresh & no baking: This is how you conjure up a heavenly strawberry cake with vanilla curd cream.
Finally delicious strawberries fresh from the field again! And what better way to use them than in a fruity cake? Today we'll show you how you can conjure up a wonderful strawberry cake without baking.
Strawberry cake without baking: simple recipe
Conjuring up a pompous strawberry cake can be a lot of work. Especially if you want to bake the cake base yourself, you should plan a relatively large amount of time. How good that our recipe is completelycomes along! And preparing the cream is really easy.
The cake is not only super easy to prepare, but also tastes heavenly. The vanilla curd cream is wonderful, the sponge cake is nice and crunchy and both paired with the sweet strawberries taste simply divine.
Ingredients for the strawberry cake
If you still want a large cake, here is the list of ingredients.
For the cookie base:
- 150 g butter biscuit
- 80 g Butter
For the cake cream:
- 400g strawberries
- 750 g low-fat quark
- 250 g Joghurt (mind. 3,5 %)
- 200g Stage
- 3 tbsp sugar
- 2 packs of vanilla sugar
- 2 Pck. Gelatine
- some lemon or lime juice
Aside from that:
- Tortenring 22 cm
- A handful of strawberries for garnish
Here's how:
1. The first step is to prepare the base for the strawberry cake. To do this, melt some butter in a saucepan over low heat. In the meantime, process the shortbread biscuits into crumbs. The best way to do this is with a blender (here on Amazon*). Alternatively, you can put the cookies in a bag and crush them with a rolling pin. Now put the biscuit crumbs in a bowl together with the melted butter and mix.
Are you an Oreo fan through and through? Then you can also use Oreo cookies instead of the butter cookies. A chocolate base also goes great with the fresh berries.
2. Place cake ring on a serving platter, large plate or other clean surface. Pour the cookie crumb and butter mixture into the cake ring. Press firmly onto the base with a spoon and hold the cake ring firmly so that nothing slips. Spread the cookie dough as smoothly as possible. Place the cookie base in the refrigerator to firm up.
3. Now it's time for the cake cream. To do this, place low-fat quark, yoghurt, sugar and vanilla sugar in a large bowl and mix with a spoon or whisk until a homogeneous mass is formed. Now beat the cream in another bowl and fold in the vanilla curd cream. Add a splash of lemon juice.
4. Now wash the strawberries and cut them in half lengthways. Take the cookie base out of the fridge. Place halved strawberries on the outer wall of the cake ring. The cut side should face outwards and the “tip” of the strawberries should face up. The principle is the same as for the mini tarts in the video.
If that's too much fiddly work for you, you can simply cut the strawberries into pieces and place them evenly on the base.
5. Then prepare the (vegan) gelatine according to the package instructions and add it to the cream. Quickly pour the mixture into the cake ring. The strawberries should be completely covered. The whole thing now goes into the fridge for at least 2 hours.
6. When the cream is firm enough, you can carefully remove the cake ring and serve your masterpiece. Bon appetit!
Decorate strawberry cake
If you want to make an even more impression, you can now make the cake even nicer. We simply use a handful of strawberries.
To do this, do not remove the green of the berries or cut the strawberry, but simply place it in the middle of the cake - this makes the cake look nice and fresh and modern. If you like it classic, you can also halve the strawberries and spread them on the cake.

You can also use other fruits to top your cake. Blueberries or raspberries, for example, go particularly well with strawberries. Oreo cookies or chocolate chips also look great with the refreshing strawberry cake, both visually and in terms of taste.
