“Eat yourself stupid” cake: cake recipe with pudding cream
The “Eat yourself stupid” cake (or eat you stupid, eat me stupid or eat yourself stupid) consists of three layers: a classic shortcrust pastry, a pudding-based cream and a crunchy topping of caramelized walnuts and Dark chocolate. Sounds heavenly, right?
Ingredients for one tray:
For the shortcrust pastry:
- 250 g Flour
- 3 tsp baking powder
- 50g sugar
- 1 TL Vanilleextrakt
- 1 pinch of salt
- 1 No (Gr. M)
- 125 g Butter
- some fat for the shape
For the pudding cream:
- 1 Pck. Vanillepuddingpulver
- 50g sugar
- 1 TL Vanilleextrakt
- 1 pinch of salt
- 400 ml milk
- 1 Tbsp Coconut milk
- 60 g Butter
For the nut and chocolate topping:
- 250 g walnuts (coarsely chopped)
- 75g soft butter
- 120g sugar
- 50 g dark chocolate
Preparation:
1. Prepare shortcrust pastry and pre-bake it
First, open the oven180 degrees top/bottom heator circulating air: preheat to 160 degrees and grease the baking tray well. You can use butter, neutral vegetable oil or a release spray.
Then prepare the shortcrust pastry. To do this, beat the sugar with the butter and the egg until fluffy, add the vanilla extract, then stir in the flour, baking powder and salt and knead together quickly until a smooth dough is formed. Place the dough on the baking tray and press it down so that it is evenly thick.
Since the dough is pre-baked, you should prick it several times with a fork. This ensures that it stays nice and flat. Place the shortcrust pastry base in the preheated oven on the middle rackthat. 15 minutesBake at 180 degrees top/bottom heat. Then take it out and let it cool down.
2. Prepare pudding cream
Now for the cream layer: Mix the milk with salt, sugar and vanilla extract in a saucepan and let it get hot, add the pudding powder and bring to the boil while stirring. Make sure that you stir thoroughly with the whisk so that no lumps form.
When the pudding thickens, turn off the heat, set the pan aside and let the contents cool slightly. Important: Stir frequently so that no skin forms. Alternatively, you can also place a piece of cling film on the surface of the pudding.
Once the pudding has cooled, add the coconut oil and soft butter and stir until a smooth mixture is formed. Then spread the pudding cream evenly onto the cooled shortcrust pastry base.

3. Prepare the nut and chocolate topping
For the walnut-chocolate crunch, first make a caramel. To do this, melt the butter and sugar in a pan over medium heat. Break the walnuts roughly or chop them finer, depending on your taste.
Then add it to the pan and stir until the caramel is nice and golden. Be careful not to let the pan get too hot. Otherwise the caramel nut crunch will quickly become bitter. Once the walnuts have been candied, remove them from the pan and quickly distribute them evenly over the pudding mixture.
Tipp:During caramelization, the sugar-water mixture will eventually become crumbly. Don't despair and turn off the stove, many people make that mistake! Keep stirring until the sugar lumps melt again. Only then will you have real caramel.
As a final step, melt the chocolate (you can also use couverture) over a water bath and sprinkle the liquid chocolate over the cake with a spoon. Allow the nut-chocolate crunch to cool and then enjoy.

The great thing about the simple recipe: you can modify it to suit your taste. Instead of vanilla pudding, you can also use caramel pudding, for example. The delicate aroma goes perfectly with the nuts.
If you don't like walnuts or have an allergy, you can use pecans or hazelnuts instead. Using milk chocolate instead of dark chocolate creates a wonderful aroma!
