Unfortunately, I cannot tell you where the moonlight cake got its name from. But it is that it simply tastes delicious heavenly. Because of this recipe, creamy vanilla pudding, which we mix with apple juice, ends up on an airy nut cocoa biscuit. On top of that comes a spacious portion of cream and if you like, decorate the whole thing with sweet chocolate sockets.

Simple recipe for a moonlight cake
Ingredients for 1 springform pan (26 cm):
For the soil
- 100 g soft butter
- 100 g of sugar
- 1 PCK. Vanilla sugar
- 125 g ground hazelnuts
- 4 owner
- 1.5 electric backcoao
- 0.5 PCK. Baking powder
- 1 pinch of salt
For the filling
- 250 ml apple juice
- 2 egg yolks
- Juice of half a lemon
- 1 Pck. Vanillepuddingpulver
- 3 tablespoons of sugar
- 100 g Butter
For topping
- 250 g scene
- 1 PCK. Vanilla sugar
- Chocolate
And this is how it works:
1. First we cook the pudding. To do this, stir the apple juice, lemon juice, pudding powder and sugar and bring to the boil in a saucepan while stirring constantly. Take off the stove, stir in the egg yolks and butter in pieces so that no lumps are created. Check the pudding cream aside and let cool.
2. The oven on180 degrees top/bottom heatPreheat and layer the bottom of a spring spring shape with baking paper.
3. Separate the eggs for the dough. Mix the soft butter with the sugar, vanilla sugar, egg yolk, cocoa powder, baking powder and nuts with a hand mixer. Beat the egg whites with a pinch of salt and carefully lift under the dough. Then fill into the mold and for approx.25 minutesbake. Then let cool well.
4. In the meantime, beat the cream for topping with vanilla sugar until stiff and put in the fridge.
5. Now spread the pudding on the cooled cake base and decorate with the solid cream. For approx.2 hoursPlace in the fridge. Sprinkle with chocolate sockets for serving.
