In advance in the video: Baking tips for the perfect sheet cake
Quick to make and a hit on every coffee table: our juicy tray-baked cake with rhubarb, pudding and quark is the perfect mix of sweet and sour.
Between April and June there is rhubarb again, yay! I'm really happy about the fruity, sour seasonal vegetables because they contain a lot of vitamin C and are good for digestion. The best reasons to use fresh rhubarb in a delicious cake, right?
To balance out the slightly sour taste of the rhubarb, it ends up in pieces on a creamy pudding layer - temptingly delicious, I can promise you that!

Recipe for a rhubarb cake with pudding
Ingredients for 1 tray:
For the dough
- 350 g Flour
- 200g sugar
- 150 g soft butter
- 150 g Yoghurt
- 4 eggs (size M)
- 1 pack vanilla sugar
- 1 tsp baking powder
- 1 pinch of salt
For the pudding
- 2 Pck. Vanillepuddingpulver
- 800 ml milk
- 100g sugar
- 1 pack vanilla sugar
- 200 g Quark
- 800 g Rhabarber
And this is how it works:
1. Prepare the pudding according to the package instructions. To do this, first mix the pudding powder with approx. 150 ml of the milk and the sugar. Bring the remaining milk to the boil, then add the mixed powder and simmer briefly while stirring. Remove the pudding from the heat and set aside. Tip: Press some cling film onto the surface to prevent a skin from forming.
2. Wash the rhubarb, peel it and cut it into approx. 2-3 cm pieces. Preheat the oven to 180 degrees top/bottom heat. Line a baking tray with baking paper.
3. For the dough, beat the soft butter until fluffy. Then sprinkle in sugar and vanilla sugar. Add the eggs one at a time. Add yogurt and stir. Then sift the flour, packing powder and salt over the mixture and mix everything into a smooth dough.
4. Place the dough on the tray and smooth it out. Mix the quark with the vanilla sugar and then mix it into the still lukewarm vanilla pudding, then spread it over the dough. Finally add the rhubarb pieces on top. Bake the cake on the middle rack for 30-40 minutes.
