Still no idea what to serve for New Year's Eve? How about our delicious New Year's Eve soup? It's made in a flash, keeps you full for a long time and is popular with everyone.
On New Year's Eve, most of us traditionally eat fondue, raclette or even prepare an entire meal. If you want to save yourself a lot of work, you can easily prepare our delicious New Year's Eve soup for the evening.
It is ideal for a long night of partying and will keep you full for a long time thanks to the many hearty ingredients such as minced meat and sour cream.

The soup is easy to prepare, so you don't have to work with it on New Year's Eve. The best thing: you can also use leftovers, such as boiled potatoes. Whatever your taste.
And if there is anything left over: it still tastes fantastic the next day.
New Year's Eve soup: lightning-fast recipe
Soups have the completely wrong reputation of not being a real meal and not filling you up for long. Our New Year's Eve soup proves the opposite.
There's a lot in here, including mushrooms, peppers, minced meat, sour cream and cheese. This means that hungry stomachs are guaranteed to be full for a long time and nothing stands in the way of your celebration at the turn of the year. The strong soup also warms you up on cold days and will definitely be well received by your guests.
You need these ingredients:
For approx. 6 servings
- 1 onion
- 500g minced meat
- 3 red peppers
- 3 yellow peppers
- 2 cans of mushrooms
- 2 cans of pureed tomatoes
- 300 ml Broth
- 150 g processed cheese
- 200 g sour cream
- some olive oil
- Salt and pepper for seasoning
- chili, to taste
And this is how the preparation works:
1.
Peel the onion and cut it into pieces. Pour olive oil into a well-coated soup pot and let it get hot. Alternatively, you can use a pan to fry the minced meat. Add onion pieces and fry until translucent.
2. Then add the minced meat and fry it until crumbly.
Tipp:If you want to prepare the soup as a veggie version, you can simply use vegan minced meat instead of the minced meat. You can find this in the refrigerated section of the supermarket. Alternatively, you can simply use more vegetables, such as potatoes.
3.In the meantime, wash the peppers, remove the seeds, cut them into small pieces and add them to the minced meat. Sauté briefly.
4.Add the mushrooms and their liquid to the minced meat. Also add the pureed tomatoes and mix well. Add 300 ml of stock and let the soup simmer until the pepper pieces are nice and soft.
5.Finally, dissolve the processed cheese in the soup, add the sour cream while stirring and let the soup simmer for a few more minutes. Season with salt and pepper. Bon appetit! You can serve some fresh baguette with the soup.
By the way: If you want, you can of course refine the soup with other vegetables. For example, leeks, potatoes, rice or beans also go very well with New Year's Eve soup. It is therefore also ideal for using up leftovers.
