Do you love spaghetti carbonara, but can't or don't want to eat raw eggs? Then try our recipe for creamy, delicious spaghetti carbonara without eggs!

Healthy dishes or not: There are days when we just need food that is good for our soul. And spaghetti carbonara is exactly such soul food. Hardly any pasta dish is creamier than the Italian pasta classic.

The problem: The original recipe contains raw eggs. They give the sauce its creamy consistency. We have good news for everyone who can't or doesn't want to eat raw eggs: Spaghetti Carbonara can also be made without eggs.

Of course, if you leave out the eggs in the sauce, the spaghetti carbonara is no longer true to the original. However, we don't want to live up to this requirement with our recipe for spaghetti carbonara without eggs.

What we want is a real comfort food that comes together in no time and without a lot of ingredients. Thanks to a few kitchen tricks, you can have a steaming plate of pasta with delicious sauce in front of you in just 15 minutes, we promise!

Ingredients for 4 people:

  • 400 g Spaghetti
  • 200 g diced bacon
  • 350 ml whipped cream
  • some good olive oil
  • 2 handfuls of grated Parmesan
  • 1 small pinch of salt
  • 1 large pinch of black pepper

Here's how:

1. Fill the kettle and turn it on. If you don't have a kettle, fill a large pot with water and place it on the stove.

2. When the water is boiling, add the spaghetti to the pot, add a large pinch of salt and cook the spaghetti until al dente according to the package instructions. This usually takes time10 minutes.

3. In the meantime, heat the olive oil in a large pan and fry the pre-cut bacon cubes until the fat melts. If you want more flavor in the carbonara sauce, you can press a clove of garlic with a press as soon as the bacon cubes have been left out. Fry briefly, then pour in the cream and bring to the boil.

4. After the 10 minutes have passed, drain the spaghetti, collect some of the pasta water and set the spaghetti aside for a short time.

5. Now add 2 tablespoons of the pasta water and a handful of grated Parmesan to the sauce, both of which thicken the sauce and make it nice and creamy. Finally, stir the spaghetti into the sauce and mix everything well. Season with pepper and a little salt (be careful, the bacon is usually quite salty).

6. Place on deep plates and finish with some grated Parmesan and freshly ground black pepper. Serve immediately!

Spaghetti Carbonara: Is it also vegan?

In order for your spaghetti carbonara sauce to taste like the original Italian pasta, animal ingredients such as eggs, cream, bacon and parmesan are necessary. This is the only way to achieve the typical taste. But even if you follow a vegan diet, you don't have to miss out on a delicious dish. Because there are a few tricks and special ingredients that can give you the taste of the classiccan imitate.

The vegan spaghetti carbonara will not taste exactly like the original, but it is still very tasty and super creamy.

Replace cream:
Instead of normal cream, you can simply use products such as soy cream or cream substitute made from oat milk for the alternative pasta sauce.

Replace Parmesan:
Yeast flakes are suitable to imitate the spicy taste of Parmesan cheese. Simply add 3 tablespoons to the vegan cream sauce. Yeast flakes are a vegan cheese substitute and give your carbonara sauce that important kick.

Replacing eggs:
To achieve the desired creaminess of the carbonara, you can add a tablespoon of cashew butter to the sauce. Alternatively, you can soak 200 g of cashews in water overnight and then puree them.

Replace Bacon Flavor:
A little vegetable broth, a good pinch of smoked salt and an additional clove of garlic provide extra spice and the desired salty taste.
