Tomato soup with tortellini: Our favorite recipe for cold days

What's better on cold days than a warming soup? Nothing at all! And if it's so quick and easy, it definitely belongs on your meal plan this week.

All you need for tomato soup are a few fresh ingredients like basil, carrots, garlic and an onion. A pinch of chili flakes refines the dish and the tortellini are the perfect accompaniment - so that there is something to bite into.

Quick recipe for tomato soup with tortellini

Spoon yourself into tomato heaven with this tortellini soup! This recipe is made in no time and will warm you from the inside. Half a teaspoon of chili flakes provides a pleasant spiciness and heat. If you prefer it milder, you can of course leave this ingredient out. You'll still eat the soup in no time - we promise!

Ingredients for 2 servings:

  • 1 l vegetable broth
  • 1 clove of garlic
  • 1 carrot
  • 2 cans of peeled tomatoes
  • 1 onion
  • 250 g tortellini (e.g. with spinach and ricotta filling)
  • fresh basil
  • Salt and pepper
  • 2 tsp sugar
  • 1 TL Natron
  • ½ TL Chiliflocken
  • Butter or oil for frying

Preparation:

1. Peel the garlic and onion and chop them finely. Also peel the carrot and cut into slices. Melt butter in a large pot, then sauté garlic, onion and carrots. Add sugar and let it caramelize briefly with the vegetables. Season the whole thing with half a teaspoon of chili flakes.

2. Next the canned tomatoes go into the pot. Season with salt and pepper, then pour in the vegetable stock and simmer over medium heat for about 20 minutes. Meanwhile, cook the tortellini according to the package instructions and drain.

3. When the carrots are soft, blend the soup with a hand blender (buy here on Amazon*) Puree immediately in the pot and season with salt and pepper.

Tipp:Add a teaspoon of baking soda to the soup! This reduces the acidity and makes the tomato soup incredibly gentle and delicious. Don't be surprised if the pot foams up a bit for a moment, just keep stirring until it stops again.

4. Finally, add the tortellini to the finished soup, cut the basil into fine strips and distribute over the soup before serving. If you want, you can also serve parmesan or toasted bread with it. Enjoy it!
