- 10 egg whites
- Zest of a lemon
- Peel of an orange
- 1 tbsp lemon juice
- 1 TL Weinstein
- 1/2 tsp salt
- 200 g sweetener of your choice
- 50 g coconut flour
- 2 tablespoons arrowroot flour or other starch flour
- 1 TL Xanthan
- 2 egg whites
- 1 tsp cinnamon
For the cream:
- 30g sweetener
- 1 TL Weinstein
- 1 TL Vanilleextrakt
- 60 g Coconut grater
preparation:
Preheat oven to 180°C. Mix coconut flour, arrowroot flour, xanthan gum and cinnamon thoroughly in a large bowl. Add the sweetener and set aside. Beat 10 egg whites with a mixer until foamy. Add the lemon juice and the zest of the lemon and orange, then also the salt and the Vienna stone and mix well. Add the sweetener and beat until fluffy. First slowly add only 1/3 of the dry mixture to the egg whites and then gradually add the rest. It is very important that the mixture remains airy. Put everything in a springform pan and bake for about 50 minutes. Then let it cool upside down for 1 hour. Cut the cake into three plates. Mix the ingredients for the cream, except for the coconut flakes, together very well using a hand mixer for 3-4 minutes. Lubricate the cake plates with this, layer them on top of each other and finally sprinkle with desiccated coconut.
