You need these ingredients
- 1 Camembert or any other soft cheese
- Bacon
- 1 pack of puff pastry (with two doughs)
- 1-2 egg yolks
- Sesame
Preheat the oven to 180 degrees.
Prepare a springform pan, large bowl or similar as a template for cutting out the circles and a brush for brushing the dough.
Have baking paper ready.
How to prepare the recipe
- Place a tray lined with baking paper in front of you.
- Cut two equal sized circles from the puff pastry.
- Place the first circle on the baking paper and the Camembert in the middle.
- Place the second circle over the cheese and other dough.
- Now cut both circles of puff pastry into several segments - from the edge of the Camembert outwards, like cakes.
- Place a strip of bacon on a segment of the top circle and roll it from the outside toward the cheese. Repeat with the other segments.
- Now repeat the same thing again with the bottom puff pastry so that you have two rows of rolls around the cheese.
- Whisk the egg yolk in a bowl and brush it all over the puff pastry.
- Sprinkle with sesame seeds.
- Place the tray in the oven and bake everything for about 40 minutes. The tops of the dough should turn golden brown, but not too quickly, so that the Camembert can melt without the dough burning in the meantime.
- Take the Camembert puff pastry out of the oven and let it cool down a little.
- Unfold the cheese (the rind should be fairly easy to remove) to access the liquid interior, into which you can dip the bacon morsels.
A few useful tips for making puff pastry with Camembert
- You can spread baking paper around the cheese before placing the second dough on top. Without the paper, the two layers may stick together during subsequent cutting. If you separate them from each other to wrap them, the dough may tear. Once you have rolled up the top layer, you can remove the paper again.
- If you prefer, you can trim off the top rind of the cheese before placing the second circle of dough on top.
- Be careful when choosing the temperature and baking time as these can vary from oven to oven. The aim is to give the soft cheese enough time to melt without the dough burning on the outside. If necessary, reduce the oven temperature.
- As already mentioned, you can also use sausage instead of bacon.
