Cauliflower gratin with ham

Ingredients for 4 servings
- 1.2kg cauliflower
- 2 cloves of garlic
- 4 spring onions
- 300 grams of cooked ham
- 300 ml vegetable broth
- 150 ml Sahne
- 20 grams of breadcrumbs
- 20 Gramm Butter
- 20 grams of wheat flour
- A pinch of nutmeg
- 1 tsp chili flakes (optional)
- Salt and pepper
preparation
- Rinse the cauliflower with cold water, clean it and divide it into small florets.
- Bring water to the boil in a large pot and cook cauliflower for about 10 minutes.
- In the meantime, clean and chop the spring onions.
- Chop garlic finely.
- Melt butter in a saucepan over medium heat and sauté spring onions and garlic until translucent, 2-3 minutes.
- Sprinkle with flour and season with spices, salt and pepper.
- Pour the broth and cream into the pot and bring to the boil briefly.
- Remove the pot from the heat and fold in about 20 grams of Parmesan.
- Preheat oven to 180 degrees.
- Cut the cooked ham into small cubes and fill it with the cauliflower in a baking dish.
- Pour the béchamel sauce over it and mix well.
- Sprinkle with breadcrumbs and remaining Parmesan and bake for about 30 minutes until golden brown.
- And voilà – your creamy cauliflower gratin with ham is ready!
Cauliflower gratin recipe from the Thermomix
You can prepare cauliflower gratin even faster and without a lot of frills in the Thermomix!
Ingredients for 4 servings
- 1kg cauliflower
- 200 ml milk
- 200 Gramm Fresh cream
- 500 ml vegetable stock
- 200 grams of Gouda or Emmental cheese
- 30 grams of cornstarch
- 30 Gramm Butter
- A pinch of nutmeg
- Salt and pepper
preparation
- Place cheese in mixing bowl and grate for 6 seconds/speed setting 8. Set aside.
- Pour vegetable broth into the mixing bowl. Divide the cauliflower into florets and place them in the Varoma container. Steam for 20 minutes/Varoma/speed 1.
- Preheat the oven to 220 degrees and place cauliflower in a baking dish.
- Empty the mixing bowl to 200 grams of liquid and add the crème fraîche, milk, cornstarch and spices. Cook for 7 minutes/100 degrees/speed 1.
- Place 100 grams of cheese in the mixing bowl and mix for 5 seconds/speed setting 3.
- Pour the sauce over the cauliflower and sprinkle with the remaining cheese.
- Spread butter on top in small pieces and bake for 20-25 minutes until golden brown.
