For the vanilla cream
- 260 g Quark
- 140 g cream cheese
- 2 tsp vanilla sugar
- 4 Owner
- 120 ml coffee, freshly brewed
- 1 TL Amaretto
For the baked apple layer
- 4 medium apples
- 3 tsp brown sugar
- 2 tsp lemon juice
- 20 g flaked almonds, for garnish
- Spice mix for gingerbread (3 pinches of cinnamon, 1 pinch of clove, 2 pinches of nutmeg, 1 pinch of anise)
For the speculoos layer:
- 150 g speculoos
- 2 tsp sugar
Preparation:
1. Separate the yolks and egg whites and put them in a separate bowl. Beat the egg whites until stiff with the beater of a hand mixer or stand mixer. Gradually add the yolks and sugar, stirring constantly. Then add the other ingredients except coffee and amaretto and stir in.
2. Put the coffee and amaretto in a separate bowl and soak the speculoos cookies in it one after the other.
3. Peel the apples, cut them into small pieces (it's best to dice them) and put them in a pot. Season with the brown sugar, sprinkle with the lemon juice and season with the spice mixture. Pour 100 ml of water over it and bring to the boil over medium heat. Then reduce the heat and simmer for about a quarter of an hour. Remove the pot from the heat and let it cool. Set aside the flaked almonds and 1/2 teaspoon sugar.
4. Place the almond flakes in a pan and sprinkle with the sugar. Then let it caramelize over medium heat. Divide into pieces and use them to garnish the layered dessert.
5. Layer the dessert and refrigerate for several hours, preferably overnight. Just before serving, remove the glasses from the refrigerator.
Prepare the layered dessert for Christmas without alcohol and eggs
If you wish, you can prepare the dessert without alcohol. In this case, you can replace the amaretto with apple juice in the recipe above.
By the way, you can simply leave out the eggs and don't need to replace them. The tiramisu without eggs tastes wonderful and is simply prepared faster.
If you have leftover baked apples from the day before, you can use them. Just don't season them in this case. The baked apples also don't need to be drizzled with lemon juice. Instead, just cut them into small pieces or better yet, dice them.
Vegetarian Christmas dessert: recipe for tiramius with baked apple and speculoos

For the vanilla cream
- 260 g vegan quark (for example Alpro Skyr Style or Provamel Organic Bio)
- 140 g vegan cream cheese (for example Bedda “Fresh Cream” or Oatly “Natural Spread”)
- 2 tsp vanilla sugar
For the baked apple layer
- 4 medium sized baked apples (see instructions for baked apples above)
For the speculoos layer:
- 150 g vegan almond spekulatius (alternative: Gewürz spekulatius)
- 2 tsp sugar
Preparation:
1. Cut the baked apples into small pieces. Set aside the flaked almonds and 1/2 teaspoon sugar.
2. Put the ingredients for the vanilla cream in a bowl and beat until the sugar has dissolved.
3. Crumble the almond speculoos. To do this, place the cookies in a freezer bag, close the bag and then roll over them with a rolling pin.
4. Layer the dessert as follows: First put a layer of cream in the glass, then a layer of baked apples, then a layer of speculoos. At the top there is a thin layer of vanilla cream.
5. Place the almond flakes in a pan and sprinkle with the sugar. Then let it caramelize over medium heat. Then take the leaves out of the pan and place them on a plate. Allow to cool, crumble and garnish the layered dessert.
6. Chill the tiramisu for a few hours, preferably overnight. Just before serving, take the glasses out of the fridge.
