Preheat the oven to 220 degrees. Then bring 300 ml of water to the boil in a saucepan. Remove the pot from the heat and add the couscous, zucchini, carrots, raisins, spices, salt and pepper. Simply mix all the ingredients together, cover and let stand for 5 minutes.

In a large bowl, whisk the eggs with the ricotta. Then add the contents of the pot and mix everything well.

Form 32 balls and place them on a baking sheet lined with baking paper. Bake on the top shelf of the oven for 20-25 minutes or until the vegetable balls turn lightly golden brown. Baked couscous balls with breadcrumbs

These baked couscous balls are brown and crispy on the outside, and very easy to make. The cheeses, spices and ingredients can vary depending on your taste:

Ingredients:

480ml water
300 g ungekochtes Couscous
3 large eggs
130g breadcrumbs
Spices to taste
350g grated cheese: Use any type you like.

In a small saucepan over high heat, bring water to a boil and stir in couscous. Immediately remove the pot from the heat, cover and let stand for five minutes. Remove the lid and fluff the couscous with a fork. Set aside to cool and preheat the oven to 180 degrees. Once the couscous has cooled, mix in the eggs, 2 ounces of breadcrumbs, spices, and cheese. Line a baking tray with baking paper and form the mixture into balls. Then roll them in the remaining breadcrumbs.

400g cooked couscous
3 large eggs
2 green, finely chopped onions
2 finely chopped garlic cloves
½ red, small diced pepper
2 tablespoons fresh, chopped parsley
2 EL MEHL
1 teaspoon Ras el Hanout couscous seasoning
½ tsp salt
2 tablespoons olive oil and more for frying if necessary

Notes:

  • Moroccan couscous is the smallest of the three varieties and therefore cooks the fastest. You can also make this recipe with Israeli or Lebanese couscous if you prefer.
  • You can also swap the peppers for any other vegetable that sautés well. Carrots, zucchini, yellow squash, celery, and even chili peppers would work well.

Quickly prepare couscous meatballs

Mix all the ingredients except the oil in a bowl. Mix well to incorporate thoroughly. Add the olive oil to a nonstick skillet or cast iron skillet over medium heat. Form the mixture into meatballs and fry for 2-3 minutes. Carefully turn them over. Remove the meatballs from the pan and drain them on paper towels. Season them with salt. Good tip: You can cook couscous in advance and let it cool first. 130 grams of uncooked couscous is poured with 240 ml of boiling water and 1 tablespoon of butter. Remove from heat and let stand covered for 15 minutes. Stir and allow to cool before using for this recipe.
