Couscous salad with feta: a light and refreshing summer recipe

Summer is the time when most of us don't feel like eating heavy meals. If, like me, you prefer light meals and salads in the heat, then you should definitely read on. I've been experimenting with different salads over the past few weeks, but this recipe has become one of my family's favorites. It's about a refreshing and satisfying couscous salad with feta that was inspired by a vacation on the Mediterranean. And the best part? The salad is quick and easy and can be enjoyed at home or on the go.

Mediterranean couscous salad with feta: the perfect summer recipe

I like this salad so much! Even though you'll be given a list of ingredients right away, don't hesitate to make the salad your own. You can leave out some of the ingredients and use others instead. It's a matter of taste. Since this recipe is inspired by Mediterranean cuisine, it contains typical Mediterranean ingredientsIngredients like feta cheese, red onions, peppers, cucumbers and tomatoes. The highlight is the aromatic lemon dressing, which gives the salad a very special taste. And now for the recipe:

You need these ingredients

For the couscous:

  • 250 ml water or vegetable broth
  • 250 g fine couscous
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil

For the salad:

  • 1 Roma-Tomato
  • 1 thin snake cucumber
  • 2 root peppers
  • 100 g Kalamata olives (or other variety of your choice)
  • 150 g canned chickpeas
  • 1 red onion
  • 150g feta cheese
  • fresh herbs, e.g. E.g. parsley, mint and basil

For the dressing:

  • 2 teaspoons lemon zest
  • 4 tablespoons freshly squeezed lemon juice
  • 2 tablespoons red wine vinegar
  • some salt and black pepper
  • 6 tablespoons extra virgin olive oil

Prepare the couscous salad with feta

  1. First prepare the couscous. Bring the water or vegetable stock with the salt and olive oil to the boil. Then remove the pot from the heat and stir in the couscous. Cover the pot and let the couscous soak for 3-5 minutes. Then fluff with a fork and set aside to cool.
  2. Wash and clean the vegetables, cut the cucumber, pepper and tomato into small cubes (or any other desired shape) and chop the red onion. Place the vegetables in a medium bowl.
  3. Pit the olives and cut them into small rings. Drain the chickpeas and add them to the salad bowl along with the olives.
  4. Finely chop a few sprigs of fresh herbs and add them to the salad.
  5. To prepare the dressing, whisk the ingredients together in a small bowl.
  6. Now add the cooled couscous to the remaining ingredients in the salad bowl and pour half of the dressing over it. Crumble the feta on top.
  7. Mix everything carefully and the couscous salad with feta is ready. Serve with extra dressing.
