- 2 kg plums, washed and pitted.
- 2kg sugar
- 4 tbsp lemon juice
- 2 packets of vanilla sugar
- a pinch of salt
- 2 cardamom capsules
Preparation:
1. Cut the fruit into small pieces and place it in a deep, thick-bottomed pot along with the other ingredients.
2. Stir the whole thing and bring to the boil briefly. Then reduce the heat, let the jam cool and remove the cardamom pods.
3. Bring the jam to the boil again briefly and then let the fruit simmer until the temperature of the jam reaches 160° Celsius.
4. Skim the foam from the surface of the jam with a spoon.
5. Pour the jam into jam jars, close the jars and place them upside down.
6. Store the finished jam in the refrigerator for up to a month or store frozen for a year. After thawing, consume within three weeks. Vacuum-sealed jam jars can be stored in the pantry for up to 12 months.
7. You can use the plum jam as a filling for various cakes, as a topping for ice cream and yoghurt, and for making sauces for pork dishes.
2.1. Plum roaster recipe

(for a jam jar 175 g)
- 8 plums, pitted, peeled and quartered
- 1 Orange
- 3 tsp maple syrup
- 1/2 tsp cinnamon
- 1/4 TL Cardamom
- a pinch of kosher salt (sea salt is a suitable substitute)
- 1/2 tsp cornstarch
- 15g sugar
Preparation:
- Squeeze the orange and pour the juice into a pot.
- Add the maple syrup, spices, sugar and salt, bring to the boil briefly and reduce the heat.
- Simmer the liquid over medium heat for 5 minutes and then add the plums.
- Simmer the plum roaster for another 7 minutes until the fruit softens and the roaster thickens.
- If the plum roaster is too liquid, remove the fruit with a spoon and let the liquid simmer for another 7 minutes. Stir occasionally so that nothing burns.
- Pour into a jam jar and let cool.
Layer the plum roaster with yoghurt and oat flakes in dessert glasses and serve chilled.
2.2. Simple plum recipes: plum compote
(for a jam jar 175 g)
- 6 plums, pitted, peeled and quartered
- 1/2 Orange
- 2 tsp maple syrup
- 1/4 tsp cinnamon
- a pinch of cardamom
- a pinch of kosher salt (sea salt is a suitable substitute)
- 1/4 tsp cornstarch
- 15g sugar
- 150 ml water
Preparation:

Ingredients for 750 g plum jam:
- 750 g ripe plums
- half a cinnamon stick or 1/2 teaspoon cinnamon powder
- a clove
- 1 juniper berry
- 1 tbsp lemon zest
- 2 black peppercorns
- the juice of a lemon
- 12 g pectin (liquid)
- 150 g brown sugar
- 150ml water
Preparation:
- Wash the plums, stone them, cut them into small pieces and put them in a deep pot together with the sugar.
- Pour the water into the pot and bring the plum and sugar mixture to the boil over medium heat and simmer over low heat for 15 minutes.
- Put the cinnamon stick, clove, juniper berry, lemon zest and peppercorns in a tea bag and add to the plums.
- Add the pectin and bring the plum puree to the boil again and cook for 5 minutes.
- Reduce the heat and let the jam simmer until it reaches a creamy consistency.
- Pour the plum jam into jam jars, turn the jars upside down and let them cool.
3. Autumnal desserts, sweets and sauces
Plums can be used to prepare more than just delicious jams and compotes. There are also many autumnal desserts, sweets and sauces to which plums give a fruity and sweet note.
3.1. Recipe for a plum and onion chutney
The next recipe for plum and onion chutney has a spicy touch. These are the necessary ingredients for the jam:
- 2 tsp vegetable oil
- 3 onions (peeled and chopped)
- 3 tsp garlic paste
- 3 tsp ginger paste
- 2 TL chili paste
- 1 TL Zimtpulver
- 1 pinch of nutmeg
- 800 g plums, pitted and halved

- Add the garlic, ginger and chili paste, season with the cinnamon powder and nutmeg and simmer for 2 minutes, stirring constantly.
- Add the fruit and preserving sugar and stir.
- Pour the vinegar into the pot and simmer the savory jam over low heat, stirring frequently, for 2 hours until the jam thickens.
- If a spoon leaves marks on the surface, then the jam is ready.
- Pour the jam into six jam jars, close and let cool.
- After resting for 2 weeks, the jam is ready to eat.

3.2. Simple recipe for plum dumplings
Plum dumplings recipe: The ingredients:
- 5 medium potatoes
- 2 large eggs
- 1 tsp salt
- 2 1/2 cups type 550 wheat flour
- 18 small plums, pitted
- 4 tsp butter (unsalted)
- 128g breadcrumbs
- 60g sugar
- 1 teaspoon cinnamon, ground
Preparation:
- Pour water into a pot, add the potatoes and cook until soft. Puree the potatoes and place them in a deep bowl.
- Whisk the eggs, season with salt and add to the potatoes. Then add the flour and knead the mixture into a soft dough.
- Cover the dough with cling film and let it rest for 30 minutes.
- In the meantime, pour water into a pot and bring to the boil.
- On a floured work surface, roll out the dough as thick as a finger and cut into 5 cm long and wide squares.
- Place a plum in the center of each square, press the ends of the square together and add the dumplings to the boiling water. Reduce the heat and simmer for thirty minutes.
- Meanwhile, put the butter in a pan and melt it over low heat, stirring constantly. Add the breadcrumbs and fry until golden brown.
- Add the sugar and cinnamon powder and mix well.
- Remove the dumplings from the water, drain on kitchen paper and then sprinkle with the breadcrumb mix. Serve warm.
3.3. Simple plum recipes: Crumble
A plum crumble is quick and easy to prepare. The crispy dessert is an integral part of the autumn menu.
Ingredients for a plum crumble:
- 450 g plums (pitted, quartered)
- 32g brown sugar
- 130 g wheat flour type 550
- 60g sugar
- 1/2 tsp salt
- 1/2 Zimtpulver
- 1 egg (beaten)
- 60 g butter (melted)
Preparation:
- Preheat the oven to 180° Celsius.
- Grease a baking tray.
- Place the plums in a bowl and mix with the brown sugar and cinnamon.
- Spread the plums on the baking tray.
- Place the flour, sugar and salt in a bowl and mix well.
- Add the beaten egg and use a fork to mix the ingredients into crumbles.
- Distribute the crumble evenly over the plums and pour over the melted butter. Bake in the preheated oven for 35 – 45 minutes until the streusel turns golden brown.

Ingredients for 6 muffins:
- 150 g plums
- 90 g butter, soft
- 75g sugar
- 1 large egg
- 115 g wheat flour type 550
- 1 tsp baking powder
- 1 tsp rum

- 30 g butter, hard and cooled
- 30g sugar
- 1 pinch of salt
- 50 g Flour
Preparation:
- Beat the butter with the sugar until fluffy, add the beaten egg and stir in. Then add the flour and baking powder and mix the whole thing into a dough.
- Wash the fruit, stone it, cut it into small pieces and sprinkle with rum.
- Add the small pieces of fruit with the rum to the dough, stir and pour the mixture into muffin cups.
- Preheat the oven to 180° Celsius with circulating air.
- Put the ingredients for the streusel in a bowl and work into a crumbly dough.
- Decorate the muffins with the sprinkles and bake for half an hour until they turn golden brown.

- 140g sugar
- 400 ml milk
- 800 g sour cream
Preparation:
- Place the dry ingredients for the dough in a bowl and mix well. Then add the butter and egg and mix with a hand mixer. Roll out the finished dough into a circle and place it on the bottom of a greased springform pan. Form a high edge with your fingers.
- Heat the oven to 180° Celsius and pre-bake the cake base for about 20 minutes.
- Put the ingredients for the filling, except the plums, in a bowl and stir until creamy. Then add the plums.
- Remove the springform pan from the heat and spread the filling over the dough. Bake for another 70 minutes.
