Make your own ice cream without an ice cream maker in 10 minutes: Ice cream in a plastic bag

Ice cream is a refreshing dessert in summer and is not only popular with children. If you want to make it yourself, you don't need an ice cream maker. We'll tell you how you can make ice cream without a mixer and in just 10 minutes. All you need is a few plastic bags with a slide closure. This sounds incredible, but it is possible! It is produced in a plastic bag. This is a fun and delicious project that explores the freezing point of food. You'll find out how it works in today's article.

Basic ice cream recipe

Ingredients:

½ cup milk (100 – 125 ml)
½ cup heavy whipping cream (100 – 125 ml) e.g. 40% fat content
2 tablespoons (30 g) sugar
1 teaspoon vanilla essence
Lots of water ice
½ cup (30 g) or 6 tablespoons kosher or rock salt (fine salt also works)
Any flavors of your choice
a 2.5 or 4 liter freezer bag with a seal
a small freezer bag for the ice cream mixture, approx. 500 ml

Procedure:

1. Mix the sugar, milk, whipping cream and vanilla essence in the 500ml plastic bag. Stir until it has a uniform consistency and the sugar has dissolved. You can also do this in a bowl, but it's completely unnecessary.

2. Seal the bag well. Squeeze out all the air beforehand so that it doesn't open when you shake it.

3. Add salt and water ice to the large plastic bag. It should be about half full. Place the sealed small bag in the large one. Squeeze the air out of the larger bag and seal it tightly.

4. Put on gloves and start shaking the bag. Oven gloves or a tea towel also work. These should simply protect your hands from the extreme cold. Shake the bag for 10 minutes, then check the consistency.

5. After shaking well, you can take out the sealed bag. Cheap, easy and delicious! This portion is enough for one person and the ice cream can be eaten straight from the bag.

If you still want to serve the ice cream beautifully, you can fill it in cups and combine it with fresh fruit, for example berries and citrus fruits. Use an ice cream scoop to form perfect balls. Alternatively, you can cut off the corner of the bag and squeeze the ice cream into a bowl. You can also put the ice cream in a piping bag and squeeze it out in a spiral shape.

The science behind it

In order to melt, ice must absorb energy. During this process, the solid slowly changes into the liquid water. When you use water ice to chill the ingredients, the energy is absorbed by the ingredients and the environment (like your hands). Adding salt to the bag lowers the freezing point of the water ice, requiring it to absorb even more energy from the environment in order for it to melt. This makes the ice cream colder than it was before and causes the ice cream to freeze.

Ideally, cooker salt should be used. This is a coarsely ground sea salt or rock salt that is free of additives. The larger crystals take more time to dissolve in the water of the ice cream, allowing the ice cream to cool evenly. The result with fine salt might not be so nice.

You can use other types of salt instead of sodium chloride, just don't replace the salt with sugar. This is because the sugar does not dissolve in cold water and because the sugar does not break down into particles like an ionic material. Sodium chloride, for example, consists of Na+ and Ch- and is well suited for this purpose. The more particles there are, the greater the influence on colligative properties such as freezing point depression, boiling point and osmotic pressure.

Vegan Variant

If you want to make vegan ice cream, you can use coconut cream or almond milk instead of whipped cream. Maybe also soy or oat cream if you like it particularly creamy. As an alternative to normal sugar, powdered sweeteners such as coconut blossom sugar, sukrin, dextrose, xylitol, erythritol, etc. are particularly suitable. Rice syrup and agave syrup should also work. If you are watching your calories or are on a low-carb diet, you can take liquid stevia.

Possible flavors by adding numerous ingredients

When preparing the mixture, i.e. when the base is done, you can let your imagination run wild. You can go very minimalistic by just adding flavor (lemon flavor, vanilla flavor, etc.), or you can add 100 to 200 grams of liquid or solid ingredients straight away. Stracciatella variant with chocolate chips

Make your own chocolate ice cream

Chocolate ice cream fans can add 100 g of Nutella or melted milk chocolate to the basic recipe. To do this, put the chocolate together with some of the milk in a container and melt it over a water bath.

Optionally, you can also try this recipe for low carb chocolate syrup:

1 teaspoon cocoa powder
1/2 tbsp coconut oil or melted butter
Sweetener of your choice: For paleo diet, 1 teaspoon or more honey. For low-carb, 6 drops or more liquid stevia or other low-carb sweetener.

In small saucepan over medium heat, melt butter or oil. Add the other ingredients and stir until well mixed. Remove from heat. Let cool for a few minutes.

Fruit ice cream is a wonderful refreshment in summer. Strawberry ice cream is particularly popular with cats large and small. You can cut strawberries into pieces or puree them and add them to the milk and cream base.
