In peak strawberry season, every weekend is time to try out new strawberry cake recipes. We offer you a traditional one with cream, which can optionally be mixed with quark and yoghurt or replaced completely. You can either bake the base yourself or buy it ready-made. Further in the article you will find some unusual variations with which you can add variety to the kitchen.
Strawberry cake with cream (quark and yogurt)
Ingredients for shortcrust pastry base:
- 75gButter
- 1/2 No
- 125g flour
- 1/2 tsp baking powder
- Salt
Ingredients for sponge cake base:
- 50g melted butter
- 4 1/2 Owner
- 250g flour
- 200g sugar
- 4 tbsp hot water
- 1 pack. vanilla sugar
- 1 tsp baking powder
- Salt
The sponge cake base is soaked in 200ml sugar water. (200ml water + 1 tbsp sugar)
Shortcrust pastry cake base:
- Mix all dry substances. Crack an egg, add half to the dry mixture with the butter and knead into a shortcrust pastry.
- Roll out the shortcrust pastry and cut it out using the baking pan or springform pan. Then bake on baking paper in the oven for 12 minutes at 175-190 degrees.
Sponge cake base:
- Melt the butter, prepare the baking pan, mix the flour and baking powder in a bowl.
- Beat all other ingredients with a whisk or mixer until fluffy. The flour mixture is gradually carefully added to the egg mixture, followed by the butter last.
- Stir in carefully and bake for about 40 minutes at 175 - 190 degrees.
Ingredients for the cream filling:
- 1kg strawberries
- 500ml Magerjoghurt
- 500g low-fat quark
- 400g cream
- 200-250g Zucker
- 12 sheets of red gelatin
- 1 pack. vanilla sugar
- 1/2 juice of a lemon
- Leave four or six nice, medium-sized strawberries aside to decorate later. Wash them all cleanly and divide the quantity into two. Puree half, halve the other half.
- Spread the shortcrust pastry thinly with pureed strawberries.
- Divide the sponge cake base into two parts so that the whole thing creates two cake bases. Place one on the shortcrust pastry base.
- Soak the shortcrust and sponge cake base with half of the sugar water.
For the filling:
- In a large bowl, mix the yoghurt, quark, sugar, vanilla sugar, lemon juice and the pureed strawberries. Soak the gelatine sheets in cold water for 5 minutes, squeeze them out and warm them in a small pot.
- Gradually carefully mix the dissolved gelatine with the strawberry filling. Then refrigerate the finished mixture.
- Beat the whipped cream until stiff and carefully add it to the filling.
- Spread the strawberry filling onto the soaked sponge cake base, then distribute the halved strawberries nicely. Place the second sponge cake base on top and spread it evenly with 3/4 of the filling. Leave in the fridge overnight.
- When the strawberry filling has set, remove the ring. The finished cake is decorated with 300g of stiff whipped cream, strawberries and chocolate sprinkles.

Strawberry tiramisu with mascarpone
A particularly light variant is strawberry tiramisu. Here are the ingredients:
- 250g Mascarpone
- 250g low-fat quark
- 750g small strawberries
- 200ml whipped cream
- 200g ladyfingers
- 80g powdered sugar
- 1pk. vanilla sugar
- 150ml cold espresso
- 2 Tbsp Amaretto or Rum
For the version with a splash of chocolate, chocolate, marzipan or cocoa powder is added to the basic sponge cake base. When garnishing, you can also melt a small amount of chocolate and spread it over the surface of the cake. The amount depends on your taste.
For the recipe withRaffaeloIn addition to the basic recipe, you will also need 200g of Raffaelos, about a whole pack. About 15 of them are roughly chopped and distributed on the sponge cake base together with strawberry halves for the filling. Then the rest are used when garnishing. Grated coconut sprinkled over the cake.
Strawberry cupcakes instead of a cake
If you prefer to have the strawberry cake in small and particularly 'flexible' portions, then simply make cupcakes according to the well-known recipe. The shortcrust pastry would then fall out and you can simply bake the sponge cake dough in muffin tins. These are later hollowed out and filled with cream and strawberries.
Do you want a cake, but not a whole one? Then simply bake vanilla cookies and garnish with fresh strawberries and whipped cream. A quick recipe:
- 250g flour
- 80g ground almonds
- 100g sugar
- 150g kalte Butter
- 1 No
- 1 pk. vanilla sugar
- 1 pinch of salt
If for some reason you messed up the layers of the cake or simply didn't plan enough time to bake the whole cake, cool it and then decorate it artfully, then we have a great idea just for you! Find some vintage preserving jars, cut the strawberries and cake bases into pieces and garnish beautifully with cream in the jars. This unusual variation of the traditional cake would surely showcase your creativity.
