  1. Cut the cheese evenly into 8 slices. Preheat oven to approx. 200 C. Mix the carrots with olive oil, saffron, lemon juice and a little spice. Place on a baking tray and bake until golden brown, about 20 minutes. Let the whole thing cool down and chop it with the almonds in the food processor. Skim the salsa and add the chopped cilantro. Mix well and season if necessary.
  2. Heat vegetable oil in a large pan and fry the halloumi slices on both sides until golden brown on both sides over medium heat.
  3. In the meantime you can toast the sourdough bread and rub the garlic on one side. Place a piece of toast bread in each of 4 plates and place 2 slices of cheese on top. Briefly fry the spring onions in the pan until they become tender. Then place 3 pieces on each halloumi-topped bread slice and generously smear each with the salsa mixture.
