But today we're bringing a bit of vacation into the house and treating ourselves to a refreshing Greek pasta salad. Quick to prepare and irresistibly delicious - you will repeat the recipe several times, we promise.

Ingredients for 4 servings

  • 230 Gram Farfalle Pasta
  • 1 Lettuce
  • 1 green pepper
  • 350 grams of cherry tomatoes
  • 1 shallot
  • 30 grams of capers
  • 50 grams of Kalamata olives
  • 50 grams of feta cheese
  • 1/2 bunch of fresh parsley

Greek salad dressing:

  • The juice and zest of 1 lemon
  • 30 ml extra virgin olive oil
  • 2 cloves of garlic
  • 10 ml red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper

preparation

  • Cook the pasta in a large pot in salted water for about 7-8 minutes until al dente. Drain and let cool to room temperature
  • In a small bowl, stir together all the dressing ingredients until smooth and set aside.
  • Dice the cucumber and pepper into small pieces.
  • Halve the cherry tomatoes and thinly slice the shallot.
  • Mix chopped vegetables, olives, capers, parsley and pasta in a large salad bowl.
  • Pour dressing into bowl and whisk well.
  • Finally sprinkle with feta and put in the fridge for 30 minutes.
  • And your Greek pasta salad is ready!

Like any other recipe, our Greek pasta salad can be refined and you can experiment with the ingredients to your heart's content. Here are a few variants that we particularly like:

  • For an even more refreshing touch, use additional fresh herbs. Fresh marjoram, dill and/or mint complement the salad perfectly.
  • To make a complete meal, add some fried chicken or grilled fish.
  • Roasted peppers, marinated artichoke hearts or mushrooms also go perfectly with the Greek pasta salad.
