Marinated, grilled meat is a feast in itself. With the right ingredients and a few tricks, you can intensify the flavor of meat and make it particularly spicy and aromatic - whether it's beef, chicken, lamb or pork. You don't need many ingredients to make a delicious marinade, but there are a few basic rules to follow. We'll show you how to make a delicious barbecue marinade yourself using a few recipes.
All-purpose grill marinade for meat
A universal marinade should be such that you don't have to make a special trip to the supermarket. That's exactly what we have here. Thishomemade marinadeis made with less than 10 simple ingredients that you probably always have in your kitchen!
Ingredients:
60 g of olive oil
50g brown sugar
2 tablespoons apple cider vinegar
2 tablespoons low-sodium soy sauce
2 tablespoons Worcestershire sauce
3 garlic cloves, crushed
2 teaspoons chili powder
2 teaspoons ground cumin
1 teaspoon smoked paprika powder
Optional: a pinch of cayenne pepper
kosher salt and ground black pepper, for seasoning
- Mix the all-purpose grill marinade: Add olive oil, brown sugar, soy sauce, Worcestershire sauce, apple cider vinegar, chili powder, paprika and a pinch of cayenne pepper, if using, to a bowl or container.
- Season with 2 teaspoons kosher salt and ground black pepper, if desired.
- For marinating: Pour the all-purpose marinade over the meat or vegetables of your choice.
- Let marinate for at least 6 hours or up to overnight.
- Grill as desired. Enjoy!
Delicious barbecue marinade for pork
Ingredients:
85 ml soy sauce (light or all-purpose, not dark)
2 tablespoons brown sugar
2 teaspoons Worcestershire sauce
1 teaspoon Dijon mustard
2 cloves of garlic, minced
1/4 teaspoon black pepper
4 bone-in pork chops, 2cm thick, about 280g each
1 tablespoon oil
- Place the marinade ingredients in a ziplock bag. Massage until combined.
- Add chops. Massage to coat with the marinade.
- Remove the chops from the refrigerator 20 minutes before cooking.
- Brush BBQ grill or drizzle oil into pan and heat over medium heat.
- Add the pork and cook for 4 minutes or until the bottom is caramelized and the pork pulls away from the grill, then turn the chops and cook for 3 minutes.
- Brush both sides with the remaining marinade from the ziplock bag, then cook the coated side for 30 seconds before serving. The chops should have a nice crust.
- Place chops on a plate and cover loosely with foil. Let rest for 3 minutes before serving.
Ginger and honey for salmon
This is one of the easiest grill marinade recipes you can make at home.
Ingredients:
100g orange juice
100 g reduced sodium soy sauce
80 g Honig
1 green onion, chopped
1 teaspoon ground ginger
1 teaspoon garlic powder
Lachsfilets – 500 bis 750 g
- Mix all the ingredients for the marinade.
- In a shallow bowl, combine salmon and 2/3 of the marinade; Place in the refrigerator for 30 minutes, turning occasionally. Reserve the remaining marinade for pouring over.
- Place salmon, skin side down, on an oiled grill rack over medium-high heat; Discard the remaining marinade in the bowl.
- Grill the salmon, covered, for 15-18 minutes, until the fish begins to flake easily with a fork.
- In the last 5 minutes with the remainingPour marinade on top.
Marinate shrimp with lime and dill
Ingredients:
100g extra virgin olive oil
30g packed fresh parsley
5 g chopped fresh dill
5 g fresh coriander leaves
3 tablespoons lime juice
3 garlic cloves, halved
1/2 teaspoon salt
1/4 teaspoon pepper
uncooked shrimp, peeled and deveined
1 medium red onion, cut into thick wedges
1 medium zucchini, cut into pieces
1 medium yellow summer squash, cut into pieces
8 cherry tomatoes
- Place the first 8 ingredients in a food processor and process until puree.
- Reserve 6 tablespoons of the mixture for serving.
- Pour the remaining mixture into a bowl and mix with the shrimp and vegetables.
- Let stand for 15 minutes.
- Thread shrimp and vegetables alternately onto 8 metal or soaked wooden skewers. Grill, covered, over medium-high heat (or grill 1 inch from heat) until shrimp turn pink, 3-4 minutes per side.
- Serve on a bed of additional herbs, with crusty bread and remaining marinade.
Make your own grill marinade for roast chicken
Ingredients:
130 g reduced sodium soy sauce
80 g Rapeseed
60g water
2 tablespoons dried chopped onion
2 tablespoons sesame seeds
1 tablespoon sugar
4 garlic cloves, minced
1 teaspoon ground ginger
3/4 teaspoon salt
1/8 teaspoon cayenne pepper
2 roast chickens, quartered
- The ingredientsfor the marinademix in a small bowl. Set aside 1/3 cup for basting; cover and store in the refrigerator.
- Reserve the remaining marinade.
- Add the chickens. Place in the refrigerator for 8 hours or overnight.
- Prepare the grill for indirect heat and use a drip tray. Place the chicken on the drip tray and grill, covered, over indirect, medium heat for 45-60 minutes. Turn the chicken and baste frequently with the reserved marinade during the last 20 minutes.
Ingredients:
1 package taco seasoning
250 g tomato juice
2 tablespoons rapeseed oil
Beef sirloin steak, cut into cubes
1 medium green pepper, diced
1 medium sweet red pepper, diced
1 large onion, cut into wedges
16 cherry tomatoes
Salsa or sour cream, optional
- Mix taco seasoning, tomato juice and oil in a large shallow bowl until well combined. Remove 1/2 cup to pour over; let cool.
- Add beef and toss to coat. Cover and refrigerate for at least 5 hours.
- Drain and discard the marinade from the beef.
- Alternately thread beef, peppers, onions and tomatoes onto metal or soaked wooden skewers.
- Grill over medium heat for 3 minutes on each side, uncovered.
- Baste with the reserved marinade.
