Kale recipe – tips for successful preparation
So that you can successfully prepare a delicious dish with kale, you should know a few important tips.
- Since only the leaves are suitable for consumption, you should first remove the hard drink. This is easy to do - you can either peel them off or cut them off with a knife.
- You should throw away damaged or wilted leaves as they have a much too bitter taste.
- Then you have to clean the leaves thoroughly and pick them off along the middle leaf vein.
- Since the kale is a bit rough, it is not for everyone. But we have an insider tip on how to make it smoother and softer. Simply massage the leaves with olive oil or coarse sea salt until they begin to smell pleasant.

Delicious and hearty dishes with kale are a classic in winter and should not be missing on any table.
Ingredients:
- 2 kilograms of kale, fresh
- 3 onions
- 50 grams of lard
- 800 ml chicken or beef stock
- 2 EL Senf
- 300 grams of Kasseler
- 6 pieces of Mettwurst
- 6 pieces of grützwurst or optionally 250 grams of smoked bacon
- Salt and pepper
This is how it is prepared:
- First, wash the kale and prepare it for cooking. Then boil in water for 10 minutes, drain and chop roughly.
- Heat the lard in a large pot and fry the onions in it.
- Add the cooked vegetables and broth and bring to the boil. Reduce heat and let simmer covered for about 60 minutes.
- Cut the sausages and bacon into small pieces, add them and simmer for another 50 minutes.
- Remove the meat and distribute it on plates with the smoked pork.
- Season the kale with salt and pepper and remove from the heat. Serve and enjoy!
- If the consistency is a little too thick for you, you could stir in 1-2 tablespoons of oat flakes and cook briefly.
With pee North German style

- Reduce heat and let simmer covered for 3 hours.

Healthy and delicious – smoothie recipe
The kale smoothie is a real vitamin bomb and ensures a fresh start to the day. It is also vegan and ideal for a low carb diet!
- Kale smoothie with bananas –For this you need 1 banana, 200 ml almond milk, 50 grams of kale, 2 tablespoons of peanut butter and a pinch of cinnamon. Simply put all the ingredients in a blender, puree finely and enjoy!
- Delicious smoothie with avocado –In a blender, puree the following ingredients: 1/2 avocado, 50 grams of kale, 40 grams of pineapple, 200 ml of coconut water or iced green tea, 1 tablespoon of matcha and 1 tablespoon of agave syrup.
White bean soup
This recipe for white bean soup with kale tastes heavenly and is guaranteed to keep you warm during those cold winter days.
Ingredients:
- a bunch of fresh kale
- 1 can of white beans
- 1 onion, chopped
- 2 cloves of garlic, finely chopped
- 1 liter chicken broth
- 80 grams of Spanish chorizo salami
- 1 tbsp olive oil
- Salt, pepper
- Fresh parsley for garnish
Preparation:
- Heat olive oil in a large pot.
- Add the onion, garlic cloves and chorizo salami and cook for 6-8. Stir occasionally.
- Add kale and continue cooking, stirring constantly, for another 3 minutes.
- Add chicken broth and white beans and bring to a boil.
- Reduce heat and simmer for about 25 minutes.
- Season with salt and pepper and serve warm.

Pesto is a real all-rounderin the kitchen and with it you can conjure up an incredible number of delicious dishes.
Kale Pesto Ingredients:
- 300 grams of kale
- 1 garlic clove, finely chopped
- 30 grams of Parmesan, grated
- 30 grams walnuts, lightly toasted
- 100 ml olive oil
- 1 tbsp fresh lemon juice
- Salt and pepper
Preparation:
- Blanch the kale in boiling water for 1 minute and then rinse with ice cubes.
- Place in a powerful blender along with the garlic clove, Parmesan and walnuts and puree.
- Gradually add olive oil and mix for another 2 minutes.
- Season with lemon juice, salt and pepper and you're done!
Grilled eggplant with kale
Ingredients:
- 2 medium eggplants
- 200 grams of kale
- 50 ml olive oil
- 1 teaspoon ground cumin
- Sea salt
- 1 TL Curry powder
- 200 grams of Greek yogurt
- 1 cucumber
- 2 cloves of garlic
- 2 tbsp fresh lemon juice
- 100 grams of cherry tomatoes
Preparation:
- Preheat the oven to 200 degrees.
- Cut the eggplant lengthways into thin slices, drizzle with olive oil and roast in the oven for 25 minutes.
- In the meantime, heat a pan and fry the kale, stirring constantly, until golden brown. This takes about 5 minutes.
- Roughly grate the cucumber and squeeze out the excess water with your hands.
- Place yogurt, cucumber, salt, lemon juice and garlic clove in a bowl and mix well.
- Remove the eggplants from the oven and season with curry powder and cumin.
- Spread the eggplant and kale on a plate, drizzle with the yogurt dressing and serve the cherry tomatoes on the side.
Vegan spaghetti with dried tomatoes
There is hardly anyone who doesn't love pasta. Our next recipe is vegan, healthy and comes together in under 20 minutes - the perfect dinner dish!
Ingredients:
- 500 Gram Spaghetti
- 150 grams of kale
- 1 jar dried tomatoes in olive oil, drained
- 4 cloves of garlic, finely chopped
- 1 onion, diced
- 50 grams of nuts of your choice – cashews or walnuts work best
- Salt, pepper and basil
This is how it is prepared:
- Cook spaghetti according to package instructions.
- Place the tomatoes, garlic, nuts and 2 tablespoons of olive oil in a blender and chop until they have a coarse consistency. Season the tomato pesto with salt and pepper.
- Fry the onion in a pan with the remaining olive oil.
- Add a dash of water and the kale and cook for about 3 minutes.
- Remove from heat, add tomato pesto and a little water and mix everything well.
- Add the pasta to the sauce and mix.
- Garnish with fresh basil and enjoy!
Delicious lentil curry
Curry is one of the most popular dishes for most vegans and vegetarians and that's why we have another suggestion for a vegan kale recipe for you. Depending on your wishes and taste, you can also add other vegetables. We can imagine that carrots, cauliflower or zucchini would go very well with it.
Ingredients:
- 300 grams of lentils
- 300 grams of kale
- 1 large onion
- 4 cloves of garlic
- 20 grams of ginger, fresh
- 1 small bunch of coriander
- 4 tbsp soy sauce
- 2 THE Currypaste Rote
- 350 ml canned coconut milk
- 200 ml water
Preparation:
- Prepare lentils according to package instructions and set aside.
- Finely chop the ginger, garlic and onions and sauté in a pot with 1 tablespoon of water over medium heat.
- Stir in the curry paste and fry for 2-3 minutes.
- Add the lentils, water and coconut milk and bring to the boil.
- Chop the kale into small pieces and add and season with spices.
- Reduce heat and simmer for about 15 minutes.
Typically German – kale with Mettwurst
Mettwurst combined with fresh kale makes the perfect warm dish for the winter.
Ingredients:
- 1 kilogram of kale
- 5 Mettwursts
- 250 grams of bacon, smoked
- 2 tbsp pork lard
- 1 large onion
- 2 tbsp mustard, medium hot
- 1 Lorbeerblatt
- 4 tbsp vegetable broth powder
- 350 grams of carrots
- 300 grams of potatoes
- a pinch of sugar
Preparation:
- Wash the kale and blanch it in boiling water for about 3-4 minutes. Drain and chop roughly.
- Heat lard. Slice onions and fry.
- Add the kale along with 1 liter of water and bring to the boil.
- Stir in vegetable stock powder, bay leaf, bacon and mustard.
- Grate half of the potatoes and add them.
- Cut the remaining potatoes and carrots into rough pieces and add them to the pot.
- Reduce heat and simmer for about 1 hour.
- Add the Mettwurst and cook for another 30 minutes.
- Season with salt and pepper and serve.
Vegetarian Lasagna
Vegetarian lasagna? Yes, it works and tastes just as good as the original! The kale gives this recipe a unique, slightly tart and spicy flavor.
Kale Lasagna Ingredients:
- 600 grams of kale
- 1 large onion, diced
- 4 cloves of garlic, finely chopped
- 4 tbsp lard
- 1 can diced tomatoes
- 60 Gramm Butter
- 3 tbsp wheat flour
- 300 ml whipped cream
- 150 ml milk
- 1 Lorbeerblatt
- Nutmeg, thyme, salt and pepper
- 150 Emmental cheese
- 350 Grams Mozzarella
- Lasagna sheets
Preparation:
- Preheat oven to 180 degrees.
- Wash the kale thoroughly and blanch it in boiling water for about 3-4 minutes. Drain and set aside.
- Heat the lard in a large pot and fry the garlic and onion in it.
- Roughly chop the kale and add it.
- Add the tomatoes with about 200 ml of water, season with salt and pepper and stir well.
- Simmer over medium heat for about 20 minutes.
- Heat the butter in another pot and sweat the flour with the bay leaf and thyme.
- Deglaze with milk and cream, bring to the boil and then reduce the heat and simmer for 6-7 minutes.
- Grease a baking dish with a little butter.
- Now place 3 lasagna sheets on top and spread half of the tomato sauce on top.
- Then add another 3 lasagne sheets, which you spread with half of the bechamel sauce.
- Repeat the process again.
- Finally, top with grated Emmental cheese and mozzarella slices and bake for 40 minutes.
Kale Chips Recipe

- Preheat oven to 150 degrees.
- Drizzle the kale with a little olive oil, spread it on a baking tray lined with baking paper and bake for about 12-15 minutes.

- 3 stalks of celery
- 3 onion
- 1 liter chicken broth
- 3 tbsp olive oil
- 200 grams of Spanish chorizo salami

Preparation:
- Heat olive oil in a large pot. Slice the onions and celery and cook for 10 minutes, stirring constantly.
- Add potatoes and chicken broth and bring to a boil.
- Reduce heat and simmer for 20 minutes.
- In the meantime, fry the chorizo salami in a pan with a little olive oil for 10 minutes, turning occasionally.
- Roughly chop the kale and add it to the pot and simmer for another 5 minutes.
- Then place in portions in a blender and puree until fine.
- Put everything back in the pot and cook for 2-3 minutes.

- 150 grams of quinoa, cooked
- 1 large sweet potato

- 1 large bunch of kale
- 150 grams of flour
- 3 tbsp cocoa powder
- 180 grams of chocolate chips
- 100 grams of dark chocolate
- 220 Gramm Butter
- 250 grams of sugar
- 80 grams of brown sugar
- 4 eggs, smashed
- 1 tbsp Vanilla extract
This is how it is prepared:
- Preheat oven to 180 degrees.
- Blanch kale in boiling water for 5 minutes. Drain, place in a blender and puree until fine. Squeeze out excess water and set aside.
- Place flour, cocoa powder and a pinch of salt in a bowl.
- Melt the chocolate, chocolate chips and butter in a water bath and allow to cool.
- Add eggs, kale, sugar, brown sugar and vanilla extract to the chocolate mixture and mix well.
- Add the flour mixture and stir slowly again.
