What are Hasselback potatoes?
We can thank the Swedes - and especially the chefs at the Hasselbacken restaurant - for inventing this special potato variation. They are sometimes sold under the name accordion potatoes or pillbug potatoes. Whatever you call them, the result is the same. It is a single potato that is sliced thinly, leaving the bottom part together, and baked until the layers fan out into crispy rounds.
Tips for cutting and preparing
Cut Hasselback potatoes: Any potato will do. You can even use small ones. Cut straight into the potato, but not all the way through. Make the slices as thick or as thin as you like.
Preparation tip: Brush the potatoes with olive oil, melted butter, or a combination of both. Bake them, brushing them with more oil halfway through the baking time.
The second application of fat is crucial. Halfway through the baking time, the potatoes will open up and then you can reach the corners with a little butter. It's this second layer that ensures crispy perfection.

Preparation time: 10 minutes to 15 minutes
Cooking time: 1 hour to 1 hour, 20 minutes
Ingredients:
- 4 large potatoes
- 4 tablespoons melted butter, olive oil, duck fat, bacon fat, coconut oil, or a mixture
- Salt
- Pfeffer
Optional: chopped fresh herbs, spices, grated cheese, breadcrumbs, panko crumbs
Instructions:
- Position a rack in the lower third of the oven and preheat the oven to 450°F.
- Wash and dry the potatoes. Scrub 4 potatoes clean and pat dry. Alternatively, you can also peel off the peel.
- Cut slits into the potatoes, leaving the bottom intact. Cut parallel slits into each potato, stopping just before cutting through so that the slices stay together at the bottom of the potato.
- Brush the potatoes with half the fat. Place the potatoes in a baking dish. Brush the potatoes all over with 2 tablespoons of butter or other fat, including the bottoms.
- Sprinkle the potatoes generously with salt and pepper.
Also follow these final steps
- Bake the potatoes for another 30 minutes. At this point the layers begin to separate. Remove the baking pan from the oven and brush the potatoes again with the remaining 2 tablespoons of fat. You can push the layers apart if they are still stuck together. Make sure some of the fat drips down into the space between the slices.
- Bake another 30 to 40 minutes. Bake the potatoes until they are crispy around the edges and can be easily pierced in the center with a knife. If you want to add extras, stuff them into the slots and sprinkle over the top 5 to 10 minutes before the end of cooking time.
- Serve immediately. These potatoes taste best when they come straight from the oven and the edges are still crispy.
Notice: Total baking time is 60 to 70 minutes for average potatoes. If your potatoes are small or larger, adjust the baking time accordingly.
