Preparing dauphine potatoes: recipes for making your own croquettes

Potatoes are without question one of the most popular side dishes because they can be prepared in so many different ways that they go well with everything. Whether as puree, chips, simply boiled or baked - there are endless dishes that you can prepare with the tubers. But have you ever heard of the so-called Dauphine potatoes? All potato fans are sure to be very curious now. We would like to introduce you to this delicacy and offer you two delicious recipes for this purpose. We are already saying: “Enjoy it!” because you will hardly be able to resist the temptation.

What are Dauphine potatoes?

Also known as princess potatoes, they are basically nothing more than potato donuts or croquettes, i.e. fried mashed potatoes. The actual name is “Pommes Dauphine”, but this has been translated into German. “Dauphine” in turn comes from the French name for the wife of the king's eldest son (Dauphin).

The dauphine potato should not be confused with the pommes duchesse, i.e. the duchess potatoes. Because the dough for our delicacies is prepared in a different way (choux pastry like cream puffs). The fries made from potato dough are traditionally fried, but you can of course also opt for a lighter version if you likeeat a low-fat dietwant. For this purpose you can use the good old oven.

Classic potato donut recipe

Although the name suggests that this side dish is something royally complicated, that is not the case at all. You probably already have the necessary ingredients at home. For 32 pieces of potato dough fries (depending on how big you make them), which corresponds to 4-6 servings, you will need:

  • 750 g floury potatoes
  • 70 g Flour
  • 80 g cornstarch
  • 4 eggs, separate the yolk and white from one of them (you will need the yolk for the oven version)
  • Salt
  • 75 g Butter
  • 100 ml water
  • Fat for deep frying

Prepare dauphine potatoes

It is advisable to cook the tubers with the peel on. To do this, you should clean them beforehand under running water. Because you add the whole potato tubers to the boiling water, they also take longer to cook. You should allow around 20 to 30 minutes. Then drain the water and let the potatoes rest until they stop steaming, after which you can peel them. Now process themto a fine pureeby mashing them and then, ideally, pressing them through a potato press if you have one available.

French Fries Dauphines Recipe – Preparing the choux pastry

Boil the water together with the butter and salt and then stir in the flour and cornstarch. It's best to sift it into the pot. Continue stirring until the dough pulls away from the sides of the pot, about 4 minutes. Before you stir in the three whole eggs, let the mixture cool down a little. Add each egg individually and only after you have mixed it well with the hand mixer add the next one. Finally, stir in the white of the fourth egg. Finally add the mashed potatoes.

Now you can prepare the Dauphine potatoes and either choose the fried versionor the oven. Process the mixture into balls. If you use the oven for baking, the dough can also be piped onto the baking tray to create interesting shapes and patterns.

Make your own dauphine potatoes in fat

Heat the fat in a saucepan (the balls should be able to float in it). Add the potato balls and deep fry until golden brown. To ensure that they are cooked on the inside without burning on the outside, the balls should not be too large. Use a teaspoon to shape them and determine the optimal size. Also prepare a deep plate that you line with kitchen paper. Then let the finished donuts drain.

For dauphine potatoes from the oven, line a baking tray with baking paper and prepare the potato fritters on it (formed balls by hand or with a piping bag). Melt some butter and mix it with the egg yolk and a little milk, then brush on the donuts and then bake them until golden brown (20 to 30 minutes).

French fries dauphine recipe with sweet potatoes without choux pastry

Want to add a touch of sweetness to your fries?Use sweet potatoesinstead of normal! The recipe is perfect if you have leftover sweet potatoes from the day before and want to use them up. For approx. 4 servings you need the following ingredients:

  • 200 g sweet potato puree
  • 200 g Butter
  • 300 g Flour
  • 5 Owner
  • Sage, pepper, salt

Mix the butter with the flour and eggs and stir in the puree. If the mixture becomes too thick, you can dilute it with milk or water. Add the sage, mix everything together well and season with pepper and salt. Line a baking tray with baking paper,form croquettesfrom the potato dough and bake them at 180 degrees until golden brown (up to 30 minutes).
