Ingredients for about 20 pieces:

  • 130 grams of wheat flour
  • 140 grams butter, at room temperature
  • 2 egg yolks
  • 20 ml milk
  • 40 grams of Parmesan. grated
  • 60 grams of Kalamata olives, pitted and diced
  • 1 tsp baking powder
  • Fresh rosemary
  • A pinch of salt

Preparation:

  • Mix the wheat flour, butter, parmesan, baking powder and rosemary in a large bowl until smooth.
  • Add the egg yolks and milk and stir until smooth.
  • Fold in the olives and season with salt.
  • Roll out the dough to about 1 cm thick and put it in the fridge for 1 hour.
  • Preheat the oven to 200 degrees and cut out the savory cookies in any shape.
  • Bake for 10-13 minutes until golden brown and voilà – your crispy Parmesan cookies are ready!

Savory oatmeal cookies

Ingredients for about 20 cookies:

  • 90 grams of fine oat flakes
  • 120 grams of whole wheat flour
  • 60 ml warm water
  • 40 ml olive oil
  • 35 grams of brown sugar
  • 1 egg, lightly beaten
  • 100 grams of Parmesan, grated
  • 1/2 tsp baking powder
  • 1 tbsp fresh rosemary, finely chopped
  • Salt and pepper

Preparation:

  • Preheat the oven to 180 degrees and line a baking tray with baking paper.
  • Whisk together the oats and water in a bowl and let stand for 5 minutes.
  • In a separate bowl, mix olive oil, sugar and egg and add to the oatmeal.
  • Add the flour, baking powder and rosemary and mix to form a smooth dough.
  • Fold in the Parmesan and season with salt and pepper.
  • Form small balls and flatten slightly with your hands.
  • Bake for 15-16 minutes and let cool.

Savory cookies with ham and cheese

  • 110 grams butter, cut into large pieces
  • 120 grams of wheat flour
  • 230ml water

Preparation:

  • Preheat the oven to 200 degrees and line a baking tray with baking paper.
  • Bring butter, salt, and water to a boil in a large pot over medium-high heat, stirring occasionally.
  • Add the flour and stir vigorously until you get a homogeneous mixture and the dough comes away from the sides of the pot.
  • Remove the pot from the heat and let cool for 2-3 minutes.
  • Place the dough in a large bowl and add the eggs one at a time.
  • Stir in the ham, 50 grams of cheddar and pepper and mix everything well.
  • Pour the dough into a piping bag and pipe small cookies.
  • Make a hole in the center with your thumb and bake for 20-25 minutes.
  • Dice the remaining cheddar and spread over it.
  • Bake for another 5-8 minutes and your savory ham cookies are ready to eat.

  • 220 grams whole wheat flour
  • 150 grams of spelled flour
  • 80 grams vegan butter, cut into small cubes
  • 200 ml almond milk
  • 20 grams of nutritional yeast
  • 3 cloves of garlic, finely chopped
  • 1 tbsp lemon juice
