Beautifully crispy, full of flavor and irresistibly delicious, this hearty spinach and feta strudel comes together in 15 minutes, making it perfect for a quick weeknight dinner. And the best part? The recipe is extremely variable and you can prepare the savory strudel with filo dough or puff pastry or make the strudel dough yourself - it's entirely up to you.
Ingredients:
- 1 roll of filo pastry or puff pastry
- 600 grams frozen spinach, defrosted
- 1 medium onion, chopped finely
- 2 cloves of garlic, finely chopped
- 200 grams of feta cheese
- 1 egg, lightly beaten
- 1 tbsp olive oil
- 1 teaspoon each dried dill and oregano
- Salt and pepper
Preparation:
- Preheat the oven to 180 degrees and line a baking tray with baking paper.
- Heat olive oil in a pan over medium heat and sauté onions and garlic for 2-3 minutes.
- Squeeze excess water out of the spinach and add the spinach to the pan.
- Season with spices and salt and pepper and stir well.
- Roughly crumble the feta cheese and add to the spinach mixture.
- Remove the pan from the heat and let the filling cool slightly.
- Roll out the dough on a floured work surface and spread the filling on top.
- Carefully roll up the dough lengthwise and brush with the egg.
- Cut diagonal slits with a sharp knife and bake the strudel for 30-35 minutes until golden brown.
- Let it cool for 5-10 minutes and voilà – your hearty strudel with spinach is ready!
Sauerkraut strudel recipe
Sauerkraut is a must in the winter and this hearty strudel with sauerkraut is guaranteed to be the whole family's new favorite! Spicy cabbage, hearty bacon and a crispy strudel dough – a real dream!
Ingredients for strudel dough:
- 280 grams of wheat flour
- 120ml water
- 40 grams of vegetable oil
- 1 tsp salt
Sauerkraut filling:
- 400 grams of sauerkraut from a can or jar
- 1 medium onion, chopped finely
- 1 red pepper, diced small
- 100 grams butter, melted
- 80 grams of sour cream
- 100 grams bacon, diced
- 1 tbsp vegetable oil
- Salt and pepper
Preparation:
- Put the ingredients for the strudel dough in a bowl and knead with your hands to form a smooth dough.
- Wrap in cling film and place in the fridge for 40-50 minutes.
- In the meantime, drain the sauerkraut well.
- Heat oil in a pan over medium heat and fry onions and peppers for 3-4 minutes.
- Add the bacon and fry for 3-4 minutes, stirring occasionally.
- Add sauerkraut, season with salt and pepper and sauté for another 2-3 minutes.
- Fold in the sour cream, stir well and remove the pan from the heat.
- Preheat the oven to 190 degrees and line a baking tray with baking paper.
- Roll out the strudel dough thinly into a rectangle on a floured work surface and brush with about 3/4 of the melted butter.
- Spread the filling on the bottom 2/3 of the dough and carefully fold in both sides.
- Slowly roll the dough into a swirl and place it seam side down on the baking tray.
- Brush with the remaining butter and bake for 40-45 minutes until golden brown.
- Allow the hearty strudel with sauerkraut to cool slightly and enjoy!
Potato strudel Grandma's style

- 1 roll of puff pastry or strudel dough according to the recipe above
- 800 grams of potatoes, waxy
- 2 medium onions, diced small
- 120 grams bacon or ham, diced
- 200 Gramm Fresh cream
- 200 grams of curd
- 20 Gramm Butter
Preparation:
- Peel the potatoes and boil them in salted water for 25-30 minutes.
- Allow cooked potatoes to cool completely and grate finely.
- Melt butter in a pan over medium heat and sauté onions for 2-3 minutes until translucent.
- Add the bacon to the pan and fry until crispy, 2-3 minutes, stirring occasionally.
- Add potatoes, season with salt and pepper and sauté for 2-3 minutes.
- Remove the pan from the heat and fold in the crème fraîche and quark.
- Preheat the oven to 180 degrees and line a baking tray with baking paper.
- Roll out the dough on a floured work surface and brush thinly with olive oil.
- Spread the filling on top and slowly roll up the dough from the long side.
- Fold in the sides and brush again with a little olive oil.
- Bake the potato strudel for 30-35 minutes until golden brown.

- 200 grams broccoli, diced
- 200 grams mushrooms, diced
- 1 red pepper, diced
- 1 medium onion, diced
- 2 cloves of garlic, finely chopped
- 150 grams of mozzarella, grated
- 1 tbsp Italian seasoning
- 1 No
- 2 tbsp olive oil
- Salt and pepper
Preparation:
- Heat olive oil in a large skillet over medium heat and fry broccoli and peppers for 5-6 minutes, stirring occasionally.
- Add the mushrooms, onions and garlic cloves and sauté for another 2-3 minutes.
- Season with spices and salt and pepper and remove the pan from the heat.
- Add the mozzarella and mix everything well.
- Preheat the oven to 200 degrees and line a baking tray with baking paper.
- Roll out the puff pastry on a floured work surface and spread the filling on top.
- Roll the dough carefully and press the ends together slightly.
- Cut diagonal slices with a sharp knife and brush with the egg.
- Bake the savory strudel for 25 minutes until golden brown and allow to cool slightly.
