Ingredients:
- 500 g Ricotta
- 120g sugar
- 100 ml whole milk
- 100 g flour type 405
- 1 egg, room temperature
Preparation:
1. When baking with ricotta, you must strain it first. To do this, place a fine-mesh sieve over a bowl. Then line the colander with cheesecloth or thick paper towels. Spoon the ricotta on top, pressing it down with the back of a wooden spoon to squeeze out as much liquid as possible. You can also do this the day before and let the ricotta drain completely in the fridge overnight.
2. Beat the sifted ricotta and sugar with the whisk. Add the milk and egg, beating until creamy. Then add the sifted flour and continue beating well until the mixture has a uniform consistency.
3. Pour the mixture into a greased round springform pan (20 cm diameter) lined with baking paper. Bake the ricotta cake in a preheated oven at 160°C for 45-50 minutes.
4. After the cake is baked, let it cool in the switched off oven before removing it from the pan.
5. After the cake has cooled completely, you can dust it with powdered sugar or decorate it with fresh fruit such as berries or citrus fruits.
