Italian lemon cake: Two delicious recipes for juicy cake enjoyment

Italian lemon cake with ricotta: a classic recipe for connoisseurs

This traditional Italian cake is moist and full of flavor. You can enjoy it in the morning or afternoon with coffee as a pick-me-up or serve it with ice cream or cream as a dessert. The classic recipe is very simple and does not require any special experience in the kitchen.

Ingredients:

  • 125g butter, at room temperature
  • 150 g Feinzucker
  • 3 Owner
  • 1 tbsp finely grated lemon peel
  • 250 g Ricotta
  • 100 g Flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 60 g Polenta (Maisgrieß)
  • the juice of one lemon, approx. 80 ml
  • Powdered sugar for dusting

Preparation:

  1. Preheat the oven to 150 °C fan oven. Grease the bottom of a 20 cm round springform pan and line it with baking paper.
  2. Beat the butter, sugar and lemon zest in a bowl with a hand mixer until the mixture is light and creamy. Gradually add the ricotta and beat until just combined. Add the eggs one at a time, mixing well after each addition (don't worry if the mixture looks curdled at this stage).
  3. Fold the flour, corn semolina, salt and lemon juice into the butter mixture. Stir with a large metal spoon until well combined.
  4. Pour the mixture into the prepared pan and smooth the surface.
  5. Bake for 45 minutes or until the center of the cake springs back when lightly touched. (The cake will rise slightly but will sink back to a flat surface when cooled).
  6. Let the cake stand in the tin for 10 minutes, then transfer to a wire rack to cool completely. Dust with powdered sugar before serving.

Lemon cake without flour: Italian Torta Caprese al limone

The Torta Caprese al limone or also known as Torta Caprese Bianca is an Italian cake specialty from the Capri region. It's not about tomatoes and mozzarella at all, but about a delicious, gluten-free cake made with almonds, white chocolate and lemons. It is considered a variation of the well-known oneItalian chocolate cake Torta Caprese, whose recipe you can also find on our site.

Ingredients:

  • 340 g ground almonds (almond flour)
  • 2 tbsp cornstarch
  • 170g white chocolate
  • 100g sugar
  • 170 g Butter
  • 1/2 tsp salt
  • 4 large eggs, separated
  • 2 tbsp limoncello (or freshly squeezed lemon juice)
  • Zest of 2 lemons
  • Powdered sugar for dusting

Preparation:

  1. Preheat the oven to 180 °C /160 °C fan/ and grease a 22 cm springform pan.
  2. Break the white chocolate into small pieces and place in a microwave-safe bowl. Microwave at half power for about 60 seconds, stir, and heat for another 30 to 45 seconds. Stir until completely melted. Set aside.
  3. Mix the cornstarch with the almond flour.
  4. Beat the egg whites with 2 tablespoons of sugar and a pinch of salt until stiff peaks form. Set aside.
  5. Using the same beaters, beat the butter and remaining sugar on medium speed until pale, 1 minute.
  6. Then add the lemon zest, almonds, white chocolate and limoncello. Fold in with a rubber spatula or wooden spoon.
  7. Carefully fold in the stiff egg whites in 3 portions with a light hand. Don't stir again and again.
  8. Bake the Torta Caprese Bianca in the preheated oven for 45-50 minutes, until the edges loosen slightly and a toothpick comes out dry.
  9. Allow to cool, dust with powdered sugar and serve.

Notes:

  • The cake will keep for 2 days in a tightly closed container.
  • For a taller cake, you can use a smaller diameter springform pan for baking.
