Ingredients for 4 servings

  • 1 kg potatoes, waxy
  • 120 ml vegetable broth
  • 1 medium-sized cucumber
  • 1 small onion
  • 20 ml apple cider vinegar
  • 40 ml olive oil
  • 1 TL Dijon-Mustard
  • Salt and pepper

preparation

  • Cook the potatoes in boiling salted water for about 20 minutes and peel while they are still warm.
  • Heat vegetable broth and add apple cider vinegar.
  • Cut the potatoes into slices and sprinkle with salt.
  • Cut the onion into thin rings, place on the potatoes and season with a little black pepper.
  • Pour the vegetable broth over the whole thing and add olive oil and mustard over it.
  • Mix gently with a wooden spoon and let stand at room temperature for at least 1 hour.
  • Cut the cucumber into thin slices with a vegetable slicer or a sharp knife and add to the potato salad.
  • Stir everything carefully again and put it in the fridge for 15 minutes.
  • And voilà – your delicious potato and cucumber salad is ready!
